i fish for pike, most times i don't bother with jig hook and use a screw in jig with a bottom eye for a stinger, sometimes 1 to 2 trebles on the underside

Different jigs are great for different situations and environments. In a spot that has less vegetation, or not dropping all the way down and hitting a nice mid depth from a boat, this would work pretty good. Obviously for heavy veg you'd want a more weedless setup, probably just skipping the treble would make it work for you pretty well, maybe add a jig spinner instead

Couldn’t you just slide the swivel up the shank and put a bait on? Once the baits in place the swivel won’t move? I might be missing something though
Yes you can do and I have done this before, but having the treble come away from the body seems to land more pike
