OMG! Jessica, you can really enlighten your audience very well! I never knew that Sinigang can come in many forms (and peso rates ... hahaha!). With my foreign friends, when they try Sinigang, they get shocked by the sourness. Surprisingly, they find themselves sipping and sipping it more. It's then they realize that Sinigang can be quite addictive and refreshing!!! ❤❤❤❤
And the Sinigangs featured in the episode are not even 5% of all the other different varieties available within the country!! Sinigang is so versatile, my favorite part of the dish! ❤️

I really liked the concept for this video of showing the range from the homemade to more fine dining version. I'm Cebuano and don’t have a range of experiences with Tagalog cuisine, so this helps me get a sense of the variety that's available out there for me try. From your video, I think I'll be trying out DPD Karinderya and the sinigang risotto. Well done Jessica and team!
i'm a beef lover so obviously sinigang na baka is my favorite. must try also are sinigang sa miso na pink salmon and sinigang sa bayabas na bangus/beef. for me, sinigang sa bayabas > sinigang sa miso > sinigang sa sampalok > sinigang sa santol > sinigang sa kamias > sinigang sa calamansi. fun fact: if u like sinigang sa sampalok, put banana ketchup into your bowl then mix it with the sinigang.
When you tried the sinigang na watermelon, I rememberedy my childhood when there are lot of varieties of sinigang in comparison to this generation which are rare to find the different variety of sinigang like sinigang sa bayabas, pinya, santol, mangga kamias etc. Most of today's sinigang are just tamarind base and the calamansi which are commonly use for fish like the one you taste in DPD which is also known in Bicol as Kusido. Not to mention other varieties of meat in sinigang. I missed those days even to the common karinderya you can find those different varieties of sinigang unlike now, namayapa na yata yung mga matatanda na matiyaga nagluluto nun.
Too many variants, it makes it a joke. When you want to eat this in a restaurant, you will never know, if it comes with lemon grass or bell peppers. No single flavor, so it has no meaning, 😢

Try sinigang na baka sa bayabas , if you can find it. From nueva ecija and perhaps also, bulakan. As you know the different combinations of animal proteins and pampaasim really makes for differing flavors. Other pampaasim are kamyas, alibangbang, katmon, binukaw/batwan, etc.
This series is one of a kind. It's a treat especially for food lovers or those who wants to explore "common/homey" food but with a twist. I can’t make you taste my mom’s sinigang but here’s my fave commercial sinigang list: 1. Giligan’s - So far the sinigang I had from different branches are consistent, it’s perfectly sour. Their sinigang sa salmon belly is so well made that it doesn’t taste fishy. 2. Kanin Club’s sinigang rice! OMG my favorite! The perfect sinigang but dry. Whoever invented that dish is a genius! 3. Pamana in Tagaytay had this sinigang that is made from manggang hilaw. I can’t remember exactly the name of that dish, but I remember myself doubting if I’ll like it since the sinigang is not made from the usual sampalok. 4. Escala - call me weird, but the first time I dined at Escala, I ordered their sinigang 😅 It was really nice, the soup is sour, lots of veggies, the serving is also good for two rounds if you’re a party of four.
I remembered Sinigang na Bangus sa Santol when I was a kid. A different kind of sinigang because it uses santol which is different from the usual like kamias or sampaloc. Daming pwedeng pang-sigang like kamias, santol, sampaloc, guava you name it, but my favorite is sinigang sa sampaloc, I just like the consistency and the sourness it produces. Ung kamias would be my 2nd, guava not so much kasi maraming seeds HAHA.

You should try the Ha Yuan Sinigang sa Bayabas (Guava) Bangus Belly, the Best! They have a Branch in Mother Ignacia St. in QC. They are a chinese restaurant but their Sinigang is the best I've tasted. Sometimes you have to call first to make sure it's available ☺️
Jessica should have a segment or a show like this in GMA. Like byahe ni drew and many more .. How they are not signing her yet 😊. She is eloquent, funny in a cute way , animated . She can be in magandang umaga or unang hirit. She will definitely add a different texture to the show.

If there will be a Part 2, may i suggest you include the sinigang places located at Bautista St., Palanan Makati and the one in Romualdez St. in Manila that both uses the pig's cheeks (if lucky, you get eyeballs too). You can also feature other variations of sinigang that uses bayabas, mangga, kamias, and even batwan.

Re: Manam, I’m really a fan of Watermelon sinigang as it is different from the usual tamarind but I’m suprised how yummy crispy sinigang is. So I love both now. 😊
there are different ways on making the sinigang sour. In rizal, my inang uses bayabas (guava) as panigang and it’s called “binayabasan” (or it could be a completely different dish, i could be wrong though lol). Green mangoes, kamias, and calamansi are used as panigang as well.

DPD Carenderia is where i was first introduced to Ulo ulo Sinigang. Elementary pa lang ako(early 80's), taga-Proj.6 kami dati, pupunta diyan ang Tatay ko na may dalang kaldero, doon niya pinapalagay yung order niya, kasi nga malaki yung ulo and maraming sabaw silang ibinibigay. Masarap talaga yung luto nila, as in. Actually, nangangasim at nagugutom tuloy ako habang sinusulat ko itong comment na ito. Haha!

How we eat sinigang is we mash the gabi, add a bit of soup and mix it with rice. We also dip the meat in alamang bagoong instead of patis with sili :)

Re: Manam, I’m really a fan of Watermelon sinigang as it is different from the usual tamarind but I’m suprised how yummy crispy sinigang is. So I love both now. 😊

there are different ways on making the sinigang sour. In rizal, my inang uses bayabas (guava) as panigang and it’s called “binayabasan” (or it could be a completely different dish, i could be wrong though lol). Green mangoes, kamias, and calamansi are used as panigang as well.

DPD Carenderia is where i was first introduced to Ulo ulo Sinigang. Elementary pa lang ako(early 80's), taga-Proj.6 kami dati, pupunta diyan ang Tatay ko na may dalang kaldero, doon niya pinapalagay yung order niya, kasi nga malaki yung ulo and maraming sabaw silang ibinibigay. Masarap talaga yung luto nila, as in. Actually, nangangasim at nagugutom tuloy ako habang sinusulat ko itong comment na ito. Haha!
