Hello Dimitra, I can’t express how over the moon I am that I came across one of your TH-cam videos a few weeks ago😃 I’m very proud to say I’m Ukrainian that grew up with amazing parents one of which my mom, was an amazing cook…she cooked her own stuff as well as Ukrainian food of all types very well. But, I also grew up with and lived door to door with a greek family and another greek family down the street. Their kids were my best friends. So needless to say, I go crazy for greek food of all kinds that was made so well by the greek families. Two of my sisters also married greek men, one was a chef and made greek food, well🤤 He made baklava like no other I’ve ever had, even till today. It’s been years and an ever lasting quest of mine to learn more greek recipes. I’m like my mom, I love cooking and enjoy cooking for my wife, family and friends. I’ve made several greek dishes, but there always have been a few that I’ve never been able to find recipes that have been authentic or at least close…you n the other hand do things both ways and the beauty of your recipes, cooking and most of all, your explanation to authenticity if you don’t do it that way sometimes. I’m so sorry for the long winded message, but I am truly so excited, grateful for you and your cooking style and explanations😊 I can’t wait to make your food and desserts, this will bring back very fond memories of my childhood with amazing greek food. Thank you so very much once again and I’ll be eagerly watching more of your TH-cam videos and waiting for new ones to come out. Oh, BTW, your baklava 🤤 almost exactly like my brother in laws was…the only difference is like you said in your video, the extra spices. Yours is awesome and juicy, not dry! I have made a similar recipe without the cheese, but chopped springonions (scallions in USA) in them and fried in olive oil!!! I used olive oil for the pastry as well!!! Turned out yum, i copied the recipe from an Asian lady!!! Now with your idea i can use cheese!!! Sounds yum as well!!! You have a great show and enjoy your recipes immensely!!! What surprises me, well i guess it doesn't really, as i have a few Greek cookbooks, is the variation in recipes from region to region or island to island! Even the people from my ancestors island tweaked the original recipes and added extras!!!
This reminded me of my mom’s little cheese pie dessert. Its kaltsounia (the crescent ones) with mizithra fried in a pan and once they’re done she would sprinkle sugar on top. It was sooo good we would always finish the plate as she cooked them 😂

Not sure where you are located, if you are in USA then you can find it in bj’s stores. I only use those queso white cheese. You also can use Pepperidge puff pastry for the dough. Can this be made with store bought phyllo, or puff pastry?
What kind of sweet filling can be used?
Puff pastry would have to be baked in the oven or air fryer. It might work with store bought phyllo :)

More like 1stick of butter
Most of the butter is used for pan frying but you can use as much or as little as your heart desires :)

Mom's bread dough flattened and filled with crumbled feta. Fried, then covered in butter. That's it.

I prefer gloves to prevent hair and skin in the food. The feta I find in the store is already salty without adding more salt or salted butter.
