One mod that I would really like to see is a mod that changes NPC interactions based on what clothes/armor you wear. A LOT about thievery is disguises and subterfuge, not just sneaking. So it would be nice to wear guard armor and be able to pick locks in the jails without getting caught, or wear stormcloak/imperial armor to take their supplies without getting caught. Or something along those lines. I just think that that would fit the thief fantasy well.

You forgot Master of Disguise and Suspicious City Guards. Add those two for PROPER stealth. Suspicious City Guards makes anything stealth harder as if a guard sees you doing shady shit, 1, or a group will follow you. You CAN lead them away to deal with them, but people will know something is up. Which is where Master of Disguise comes in, forego the sneaking all together and leave it all to luck by dressing up as an appropriate faction member to pull a fast one. It recognises basic full sets, but the disguses are MORE effective if you wear the appropriate accessory. For example, an amulet of Talos boosting your Stormcloak disguise success in Windhelm and Stormcloak camps and occupied areas.
I really like that Book of Shadows one. My old SSE load order had mods for improving stealth mechanics and related spells. The takedowns would have gone great with my lower level invis spells like Conceal (it's on nexus "Conceal spell") which only worked while you were standing still during the window. I've never tried to play pacifist before. Might be fun to try especially with a more gold in chests mod then you can really focus on thieving without killing to make a living.

It always cracks me up seeing the male skin and body enhancer mods… like yes this is a medieval, harsh land with a rough hardy people but all the men look like gigachad male models with a 15 step korean skin care routine😂
Book of Shadows has a bug that breaks bounty accumulation. If you commit a crime, the bounty clears as soon as the guards drop aggro. Also, be mindful who knockout. Townspeople will stop interacting with you or will spawn in knocked out and will turn everyone aggressive when they wake up when you enter a city. Travelers and bandits are okay to knockout. Just avoid recurring NPCs like M'aiq and Talsgar the Wanderer.
I think a nice addition to this mod list would be something like master of disguise (I think that was the name) which allows you to dress up as factions and blend in. Also a mod which kind of fixes the eye sight of people is crucial. Its very unimmersive to be able to walk in front of someone still hidden just because you have sneak 100.

Realistic AI Detection which adds mechanics like lighting or sight factors. Also changes stuff like npc wallhacks so they detect you less when around a corner or a difference when moving or standing still, etc. Sneak Tools (SE) to make every fire light source extuingishable with water arrows or light them up with fire arrows or have sound making distraction arrows, have slit throath or backstab killcams, etc. Detection Meter to turn your stealth meter from an eye to something more practical like the stealth meter of Ubisoft games (eg. Assassins Creed) with different colors when noticed but not yet caught, noticed and coming your way with directions or they've lost sight and are cautioned and searching for you. Lastly, get Triumvirate, which adds Dark Spells for the Illusion and Alteration branches, where you can teleport behind enemies and try to sneak killcam them depending on your skill lvl and much more convenient (sometimes overpowered) spells. With a good pc and some graphic mods, you should be able to turn your sneaking experience from a game from 11 years ago to a AAA game better than AC Mirage 😅

I do make elf ears for my Bretons and think they are pretty decent, but I really like how yours look. Is that a special preset/sculpt or mod to get that look? 😊
Does the Book of Shadow's Face Mask work for male characters? Since face masks generally don't show on male characters in vanilla. (Something about beards affecting them.)
I have a male character that sometimes dons a face mask depending on the situation in my current game. He has a beard and has no issues wearing a mask. Unless you were talking about this mod specifically.
Is there a mod that fixes loading into a new cell so that when you're running away from NPC's they don't get there before you and kill you before you can actually act? This would be a general great mod but specifically when running away after getting caught sneaking.
I'd recomend going in vanilla to your first playthrough. Think of things that could be made better, look for mods that do that, then make them into a load order for your second playthrough :)
The only mods I would recommend on your first playthrough are graphic and lighting mods.Alltough playing vanilla for the 1st time will always be enchanting

book of shadows is buggy and the author wont respond to messages and has an updated version locked behind his discord and if you pm him asking for it he wont bother messaging you back with a link. sad because the mod looks so amazing.

There is a mod called SUMMER in nexus with a module for disguise. Very underrated
make it more realistic it is just become real life but without real consequences

Off Limits - Trespassing Behavior Expansion Is a solid choice for thieving. With it, you can't just browse private rooms and such.
