My mother was born during the depression, one of 13 children, and all my life she made the recipe her mother used, which was even more poor than this one. They seldom had chicken broth, so the recipe is water, potatoes, celery and onions from the garden and salt and pepper, nothing else, I grew up eating this and still do to this day and really like it. I once asked her why some people use milk and a little flour to thicken it, and she said because anyone using anything other than water back then had more than most families. She said with 13 kids, one milk cow, and not enough chickens to butcher often, once a chicken was butchered, it didn't lay anymore eggs, so you had less future meals, you made do. I enjoy seeing videos like this, letting people know you can make meals with less if you need to. Thanks.

You're describing my mom❤❤ She knew how to cook up some of the best meals on a poor mans budget! She made poor mans potato soup and it was IMO the best way. She'd take leftover mashed potatoes and make potato pancakes, leftover pot of pinto beans and turn them into chili beans for another meal. My mom knew all kinda tricks to keeping us 4 kids fed with delicious meals! She was the best ! Btw I subscribed! Thanks for the video 😁😁

My mother had a large family to feed. Her soup was water, potatoes, celery, salt, pepper, butter and milk added at the end. She served it with grilled cheese sandwiches. I had the bright idea one day to thicken the broth with potato flakes. It's wonderful. I kept the rest of the package for next batch of soup. Thanks for sharing your recipe.

Just found you! My Danish gram made huge pots of mashed potatoes for the next day. Her soup, mashed potatoes, lots of diced onion and scrap bacon fried in bacon fat, bone broth, salt and white pepper, more milk if needed, or roux if too thin. Big knob of butter and chives before serving. Toasted bread and home canned fruit. Everything but the milk and flour came out of the land. Absolutely delicious to a kid. Poor to us meant being hungry, so we weren't poor.

Lovely video. Fun to see how Americans in different states cook. In France we always would make a roux with the butter and flour and cook over heat to rid the flour taste, than add to soup. We make potato soup almost weekly come winter and we use unpeeled diced red potato, a large diced yellow onion, six cloves of peeled diced garlic, some diced stalks of celery and two peeled diced carrots. Never have added meat or cheese. Then I serve with homemade croissants and butter.

How I make my soup except for roux. I use milk for creamyness and leftover mash potatoes or dried instant potato flakes for thickening. If I had it, a small can of cream corn. Not so much garlic though. I like to use Mrs Dash garlic and herb and a little salt and butter for flavoring.

I was raised on this, of course mom only used water and onion. Now with my own kids I fix it for them, but they like to call it loaded baked potato soup as I put cream in place of water then add sour cream, green onion, bacon bits, and cheese in each of the bowls. Now the milk and cornbread my Pap got me hooked on when I was 4-5, my dad, my oldest daughter and I still to this day eat it 🤗. Great memories.....

I've been eating and making this meal my whole life. Depending on the time of year (garden) we would add different vegetables, but almost always carrot and onion.
Look for pork neck bones on sale-they work so well for anything you would use a bit of pork for-this soup, beans, greens. They are usually pretty cheap but if you find them on sale, stock up-they are surprisingly meaty, very tasty and easy to avoid the bones or clean them out.

We peel, chop potatoes, chop a medium onion, add chicken broth or water, let it boil until potatoes are starting to get tender. make sure its at a rolling boil, add noodles. cook until noodles are done. Add salt, pepper, and milk and butter. Its ready!!!!

Thank you so much for sharing your poor mans potato soup! This is the way my mom always made her potato soup and I do it the same way now! If we have cheese we put it on top but I haven't added sour cream, can't say why but will try it now. We had 4 kids in our family so my parents always saved money anyway they could but we always had plenty of super tasting food to eat. It is amazing how great food can taste just using simple ingredients! I can remember my mom thinking her potato soup with cornmeal many times! We also had cornbread with dinner every night, it is something my dad just had to have! Boy he was not a happy man if we were out of corn meal and he had to have white bread! As kids it was always so funny to us when he didn't get his cornbread. He loved cornbread with buttermilk which I thought was gross but I enjoyed it with sweet milk! Thanks again for sharing!

Cornbread with the soup is a wonderful idea!
I also had an observation that sliced carrots in the soup would add value but not really add to the cost because carrots can be gained for around a dollar a bag. (Celery also cheap.)
I also like the idea of promoting soup with no cheese products in them. I've talked with several people that feel that cheese products in stores and restaurants make them feel sick or get infections easily. Whether that's true or not some people just don't like cheese in soup. Some people think that the number of people sensitive to dairy and cheese products may also be related to antibiotic abuse in growth of meat, poultry.
Personally we like to have a heavy amount of potatoes per person ratio in soup, but that's just us.
    Good job!

to make the potato soup you don't need flour slurie just smash the potatoes and that will thicken it as it cools down cuz during the depression you used the flour for making breads and cakes and gravy only then you cook you chopped onions in butter until they are soft then u add them to the potato soup and add your milk but you set aside a cup of the water that you cook the potatoes in for making it thinner if its too thick

Then again, I cook a roast and can eat at least 4 days. Day 1 roast and gravy, Day 2 open face sandwiches, day 3 use half roast for Bar B Q, day 4 Irish potato soup. Left over potatoes for either soup, stew, or faux twice baked potato.. figure I can use one roast at 11.99 and potato. Chicken goes much further when de-boned for servings. Great video!!

I like plenty of onion cooked in my tater soup and I also thicken ALL my soups and love cornbread in most of them. My parents and grandparents both eat cornbread and milk in sometimes with buttermilk.

I know this is 4 yrs later but I noticed no one brushes butter over the corn bread when it comes out of the oven.I do this with biscuits and cornbread.Great taste

    • @frybry01
      @frybry01 2 ปีที่แล้ว

@@gayemoorefield9473 That's bcoz It's better to split your piece of cornbread like a biscuit and put butter on it, you taste the butter much more than just brushing the outside. I live in the south and I don't know anyone who doesn't split their cornbread or biscuit and put butter , butter and jam, or butter and honey on it before eating it. We don't eat either without something on it or it being crumbled into our bowl of soup/chowder/stew/chili which is how we eat it or with gravy on it.

I make this kind of soup all the time....but with water and onion....loads of potatoes...and to make it more filling I do dumplings right in the soup. :) Then to kick it up....I add bits of bacon. To further it, we top it with cheese and sour cream. That the one we call loaded.

Adding a can of sweet whole corn adds a fresh pop of extra flavor and then I always add whatever meat I might happen to have - this soup is a great base for whatever else your culture calls for - different chiles are great to add!

Wow! That was so interesting. I am a New Zealander though currently live in Australia (also grew up in NY and Boston in the 1960's). I make my potato soup differently, though I always use a homemade chicken broth. I found that so interesting how you served it over crumbled cornbread. As for the raw onion lol - not for me. It shows how diverse our eating habits are around the world, and how we are influenced by our upbringing and local customs. I daresay you would find some of what I cook quite strange. Thanks for the great video.

Looks wonderful! I would dice onion and Freg celety and cook with the soup and just use water then milk and flour at end. I had never thought about using chicken broth but that looks so good! I'm going to stop at Walmart tonight for potatoes and celery as I have a little ham and going to make potato soup now for tomorrow. One of m favorite winter meals. I had not made yet this year but you made me crave it. Yum!!

Looks good, but for me, "soup" needs more liquid than that!
I'm from the northeast, brought up in a Sicilian-American household. Of Course, we'd start with the homemade, seasoned chicken broth, and I'd have lightly sauteed some sweet onions first, added the diced potatoes and tossed them with flour and a spot of black pepper, stirred around until coated, added the broth, a garlic clove smashed, cooked through, partially mash the batch, end with chopped green onions/onion tops and a ton of chopped parsley, (both always grown in pots on the doorstep, year 'round). We ate with homebaked Italian bread.
But I Do love cornbread with creamy seafood soups, chili, black-eyed peas & sausage ... or just with butter! I will check out your other cooking videos.

Heated milk, butter, sugar, add pieces of toast.. sir until all combined. Omgosh, so good especially when u had a sweet tooth and there was nothing else to eat.

My poor man's potato soup has a base of chopped cabbage and onion sauted in butter (or marg) until soft. I add chopped peeled potatoes, peas, and chopped carrots, then sprinkle with a lot of flour. I add water to cover and stir well; add salt, pepper, garlic powder, bouillon powder and marjoram; then simmer until done. This makes a thick and chunky soup.

My grandma always used Buttermilk, then she would have cornbread in a glass of buttermilk.
My potatoes soup I use half water and have canned evaporated milk. By using can milk I always have it in my stock pile. My mom says keep your cornbread mix in freezer, that way no bugs. Take it out of freezer about 2 hours before cooking.

Roue pastry ? Use butter, melt add flour, mix until it all solidifies, slowly add milk. And seasonings stir. And let the base thicken ! Can add cheese or broccoli or both !
I would put potatoes in blender leaving a few chunks, Mix until smooth add to pot stir !! Nice smooth with potato chunks ! Doesn’t take long ! Lol
