My grandma was from Poland and ended up in Pa. She taught me to always keep your bacon grease. 1 Tbs added to Haluski was her secret ingredient and it was delicious. You can also add bacon grease to your green bean, eggs (scrambled or fried), fried apples or really just about anything to take food to a different level. Grandma said during depression nothing went to waste.

I can tell you that unstrained bacon grease, I keep in fridge no more than 3 to 4 months, always checking for it becoming rancid. I do strain using sieve and coffee filter periodically, keeping no longer than 6 months in fridge; though most of the time I end up using it all up before then. Hope that helps.
My stores during the coronavirus beg to differ. The produce is all bought out in every store within less than an hour. I haven't seen a cabbage, in person, in a long, long time.

Diana Lynn, Try bone-in ham, cabbage and potatos in the crock pot. SOOOO GOOOOD! I put 1/2 of the ham and potatoes in the crock pot, and add water. Then, halfway through add the cabbage. I’m making myself hungry!
This looks so yummy. I forget that this isnt a common dish amongst families, my family on either side are not Eastern or Central European - but my mom is Irish and dad is Honduran. We love cabbage and eat inexpensively almost everyday.

Masada2 yes, we try to only go to the stores once every week. Plus a lot of the local stores are closed. The larger markets have lines, and lots of shelves are empty. Hope where you are is much better!
I have the noodles I put cabbage on my list I kept looking at the beautiful purple cabbages in the fruit n veg market but said naa don't want cabbage carrots and potatoes and too lazy for stuffed cabbage. It's so quick n ez.
I' m from a Hungarian family and we used tohave this at least every other Friday...so delicious, AND actually quite healthy as the noodles should be very eggy. I am going to start making this meal again. Thanks for bringing back fond and tasty memories My Mom also made cottage cheese noodles ( with dry cottage cheese) and also scrambled eggs mushrooms, and onions. My dad loved these Friday meals as he disliked fish.
@reality check asked my dad about it, My mom passed away in 2013. Anyway, my dad said that mexico city in the 70s was very cosmopolitan so learning dishes from "around the world" (Europe, mostly) was en vogue. He went on a business trip to Germany in 1968 and that's when he tasted this dish. He asked the lady that ran the house he was staying for the recipe and he brought it home for my mom. That's how it ended up on my family table since the late 1960s.
As a vegetarian, I find this an interesting, inexpensive meal -- and no wonder it made me think of what my late mother (born in 1930) might have eaten growing up, as her stepmother was Polish (and I recognized the word _haluski_ as Polish as well); in fact, that was also an Italian/Polish household, so I'd bet much that _haluski_ was a staple on that dinner table, what with seven kids to feed. (I wish I could ask my mother about it, but she's probably cooking for Dad and her siblings in Heaven as I type this; I do remember her preparing her stepmother's stuffed-cabbage recipe at times when I was a kid, as well as pulling out all the stops to bake _chrusciki_ every year at Christmastime.) Thank you, dear Grandma Feral, for sharing this delightful recipe and a bit of family history as well; FWIW, my mother would also have admired your Zoa Langford-original designer apron (though most often she dispensed with one in the kitchen and just took her chances with an ancient housedress).
Grandpa and I do not eat much meat but I do every once in awhile make stuffed cabbage. So good! My Mom was a great cook and baker. My Mom made delicious Italian dishes also thanks to my Dad teaching her. Chruscik Polish Bows are delicious always enjoyed at Christmas time. Soon we will be enjoying Paczki Polish Doughnuts. OMG My grandma's (msrip) stuffed cabbage was out of this world. Around a year ago I ordered it at Mill Basin Delicatessen in Brooklyn. It was quite good but paled in comparison to what I ate as a child. Mrs Fishy gave it a thumbs up when I brought her home half. Hey Grandma, I love this simple yet healthy meal. I have added sliced carrots, sliced turnips, sliced parsnips to this base recipe, even left over baked potatoes chopped up. Love this dish just like you made it as well, oh yeah, sliced smoked sausages mix in too. Please be safe and take care!
My Hungarian grandmother and mother would make this as well but would caramelize the cabbage giving it a deeper , lovely flavor......it was our comfort food growing up, now my daughter and her friends love it. My grandmother used bacon fat and/or shortening, I use whatever I have on hand: bacon fat, butter, olive oil, vegetable oil, etc....combinations of different fats give it further depth of flavor..........

High schooler here, we have, at least at my school, FCS (family consumer science) and business classes, both electives, not mandatory to graduate, but they do still have something that I would imagine would be like the economics classes that you took.
Just watch other people's grocery carts and you can see why they complain about food being so expensive. They will buy cauliflower at $4-$5 a head but turn their noses up at the humble cabbage and carrots. Today, I saw someone pay twice as much for name brand canned corn as the no name that I picked up. If you have to watch your budget, then you can't be too fussy

Love this. My father always added a lot of paprika to the cabbage while cooking, the more the better. It's impossible to add too much paprika. Thank you.
Problem is most people think paprika is a garnish. Wrong ! Minimum to any dish should be table spoons full. It has a wonderful subtle flavor. Buy good quality Hungarian paprika cheap paprika is bitter if you use it in the quantity you need to.

My grandmother is 97 and grew up in the Great Depression. I never understood her obsession with cabbage and egg noodles until i saw this video! She still cooks cabbage into almost every meal, and I remember her telling me about how they used to put their food in a bucket down the well to keep perishables cold. Such different times but so she taught me so much about living an honest life and how to cook and bake and knit & sew... I have a feeling those skills might come in very handy soon!
So true. I heard all the stories from my Mom and her sisters about the depression. My Aunt would always tell the story about how hungry she was during the depression and one day she saw a molded piece of bread on the side of the road and picked it up an ate it. They had vegetable gardens and raised chickens for eggs and to eat👩
Even growing up in the '70s this is the sort of thing my Mom or Grandmothers would make. Sometimes with Polish sausage added. Or just fried noodles as a side. Onions in butter or bacon fat is the smell of a home kitchen to me.
frugalaudio Most definitely! There is a calming effect when onions and butter/bacon fat are sauteed together, or fresh minced garlic with fresh minced parsley. If you want to make your house smell like a home cook in this manner. Your children will be imprinted with the memory ( subconsciously ) and perpetuate the tradition into the future. Also, bake homemade yeast breads/rolls to go along with these aromas - they will never stray far.

That sounds good but it's not the OLD WAY. It's a meal in it self. Remember they didn't have money for every thing. It was the depression. They could of had another meal with bacon and kielbasa. They knew how to make their money go a long way.
Actually, in Poland we call it "lazanki" (and often add some bacon to the cabbage). Haluski is the Slovak name. Slovaks also have a version of this dish with farmer's sheep cheese (bryndzove haluski).
That's very interesting. My grandma was born in Poland and came to the US at about age 6 in 1910. She always called it haluski. There were many Eastern European nationalities in our small town: Polish, Slovak, Slovenian, Lithuanian, etc. She may have picked up the name from one of her friends. She always made it with kielbasa or Polish sausage.
I use country crock plant butter it seems to be the only Vegan butter I like the others just don't taste right. I hate the brands that use coconut butter it's too overpowering.. some margarines are actually vegan if they are oil / vegetable based .. There's an avocado butter I absolutely love .. I can't remember the name of the brand
I have not had this since I was 6 and my Slovenian grandmother made it...everything that woman made, bless her soul, always started with the industrial sized crisco can being opened...pretty sure she had a 55 gal drum of that in her cellar, lol
yes, my mom too, always had the Crisco. I think there were a lot of unhealthy shortcuts picked up during the early-mid 1900's (e.g. teflon, plastics, processed foods), so sad. Overall most people ate and WERE fairly healthy, but unfortunately, it has caught up with society now.

It is delicious. My grandmother made this often. However, now as a more health conscientious 50 something adult I’d have to cut that one stick of butter down a lot and maybe omit a bunch of the noodles. Also, since there’s no protein it’s hard to call this a meal replacement....however it does make a great filler side for sure!
@@moxiefox5021 Meat is not the only thing with protein in it. A little frozen entre of Fettuccine alfredo has lots of protein in it and no meat. Broccoli has protein, lentils, beans and rice.

Yes how good would Bacon be in this and a little bit of garlic too lol. My mother would make this (she was 10 years old when the Great Depression hit) and would take a single, foot-long link of Kielbasa or whatever sausage we had, and add it it, sliced into super thin discs about 1/8 of an inch so that it seemed like a lot more than was really there. The flavor was outstanding, I always was happy when she made it. I think I need to make some soon!

@@candyjohnson3302 it is a survival meal; meant to stretch ingredients and the budget. nutrition is not the end goal but the butter provides the fats our brains needs, the cabbage is a source of nutrients and of course the eggs are in noodles so that is a small source of proteins. I think in todays day and age a lot of us take vitamins as a daily supplement. That being said, there will most likely be another meal served to people during the day, with who knows, meats and other vegetables or something. I know my dad brought home whatever he killed to help with what was going to be on the table but not everyone had a skilled parent who did that. I guarantee there is going to be some good eating here, which was a part of the reason we are all interested in the recipe.
In tough times, this is healthy enough to ensure you don't go to bed hungry. I'd rather have butter in my food than margarine. Cabbage is healthy. Onions are healthy. We can debate on pasta. There are many, many families in this world now, that would love to have a meal like this, because they have nothing.
Stuck in the house with the coronavirus stay at home order. I have all these ingredients plus a package of Hillshire Farms beef sausage. Think I'll slice it thin and cook them with the onions and cabbage. I can't help myself - I'm a meat eater! lol
I love simple and easy and delicious low cost meals like this. Looks so good. Reminds me of stir fry so I would think rice would be good as well as the noodles. And left overs could make a nice noodle soup with added ingredients.

My mom made a version of this as well ... Hungarian version . Almost the same but you start with bacon chunks and render the fat off and use that for the onions and cabbage . Kaposztas Teszta. Which is the literal translation of Cabbage Noodles
“HALUSHKI”... is the correct spelling. Make your own dumplings with just flour, eggs, water, S & P. Drop by spoonful in boiling salted water. Much more delic!

Ha ha ha " depression meal " I grow up eating halusky in 70es in Czechoslovakia ,they are different variations and one with cabbage is only one of them. You can serve them with hungarian chicken paprikas / chicken stew or with cottage cheese and bacon ,which is traditional Slovak version called " Brindzove halusky " Bon apetit !

Irish and Honduran is a very interesting combo.
This quite similar to a Bavarian dish called Krautnudeln. We just add some bacon to the cabbage and a bit of sour cream at the end.

Masada2 yes, we try to only go to the stores once every week. Plus a lot of the local stores are closed. The larger markets have lines, and lots of shelves are empty. Hope where you are is much better!
you should try a grocery delivery service. I use Instacart, and have a fridge full of fresh groceries. God bless their shoppers

I' m from a Hungarian family and we used tohave this at least every other Friday...so delicious, AND actually quite healthy as the noodles should be very eggy. I am going to start making this meal again. Thanks for bringing back fond and tasty memories My Mom also made cottage cheese noodles ( with dry cottage cheese) and also scrambled eggs mushrooms, and onions. My dad loved these Friday meals as he disliked fish.

Anyway, my dad said that mexico city in the 70s was very cosmopolitan so learning dishes from "around the world" (Europe, mostly) was en vogue. He went on a business trip to Germany in 1968 and that's when he tasted this dish. He asked the lady that ran the house he was staying for the recipe and he brought it home for my mom. That's how it ended up on my family table since the late 1960s.

As a vegetarian, I find this an interesting, inexpensive meal -- and no wonder it made me think of what my late mother (born in 1930) might have eaten growing up, as her stepmother was Polish (and I recognized the word _haluski_ as Polish as well); in fact, that was also an Italian/Polish household, so I'd bet much that _haluski_ was a staple on that dinner table, what with seven kids to feed. (I wish I could ask my mother about it, but she's probably cooking for Dad and her siblings in Heaven as I type this; I do remember her preparing her stepmother's stuffed-cabbage recipe at times when I was a kid, as well as pulling out all the stops to bake _chrusciki_ every year at Christmastime.) Thank you, dear Grandma Feral, for sharing this delightful recipe and a bit of family history as well; FWIW, my mother would also have admired your Zoa Langford-original designer apron (though most often she dispensed with one in the kitchen and just took her chances with an ancient housedress).
Grandpa and I do not eat much meat but I do every once in awhile make stuffed cabbage. So good! My Mom was a great cook and baker. My Mom made delicious Italian dishes also thanks to my Dad teaching her. Chruscik Polish Bows are delicious always enjoyed at Christmas time. Soon we will be enjoying Paczki Polish Doughnuts. I am going to make Greek Souvlaki for dinner over the weekend but, the meat comes pre-marinated thankgoodness lol though I will be making the Greek Dressing with Greek Yoghurt, Mint, Garlic and some Salt&Pepper.
I was going to buy a cake type mix today to make something nice for my Son's lunch box but, I totally forgot today while at the store. Luckily My Mum/My Son's Nan just Surprised him with a tin full of some homemade Choc Chip Cookies.
We are all stocked up for the weekend thankgoodness as there is unfortunately the back lash of a cyclone coming with a lot of rain and big winds. It's called Cyclone Oma which ironically means Grandma in Dutch. The Cyclone is just sitting off the coast now and the winds are up even this afternoon.

OMG My grandma's (msrip) stuffed cabbage was out of this world. Around a year ago I ordered it at Mill Basin Delicatessen in Brooklyn. It was quite good but paled in comparison to what I ate as a child. Mrs Fishy gave it a thumbs up when I brought her home half. I was just watching another depression meal vid and this popped into my head but I couldn't remember its name just it was cabbage and noodles. My Hungarian grandmother and mother would make this as well but would caramelize the cabbage giving it a deeper , lovely flavor......it was our comfort food growing up, now my daughter and her friends love it. My grandmother used bacon fat and/or shortening, I use whatever I have on hand: bacon fat, butter, olive oil, vegetable oil, etc....combinations of different fats give it further depth of flavor..........
My grandmother's neighbor was off the boat Hungarian, and this is one of my comfort foods with the carmelized cabbage and sour cream.

That's the kind of stuff I'd cook for the family before i got into the union. It's delicious. We need home economics back in schools.
High schooler here, we have, at least at my school, FCS (family consumer science) and business classes, both electives, not mandatory to graduate, but they do still have something that I would imagine would be like the economics classes that you took.
Just watch other people's grocery carts and you can see why they complain about food being so expensive. They will buy cauliflower at $4-$5 a head but turn their noses up at the humble cabbage and carrots. Today, I saw someone pay twice as much for name brand canned corn as the no name that I picked up. If you have to watch your budget, then you can't be too fussy

Problem is most people think paprika is a garnish. Wrong ! Minimum to any dish should be table spoons full. It has a wonderful subtle flavor. Buy good quality Hungarian paprika cheap paprika is bitter if you use it in the quantity you need to.

My grandmother is 97 and grew up in the Great Depression. I never understood her obsession with cabbage and egg noodles until i saw this video! She still cooks cabbage into almost every meal, and I remember her telling me about how they used to put their food in a bucket down the well to keep perishables cold. Such different times but so she taught me so much about living an honest life and how to cook and bake and knit & sew... I have a feeling those skills might come in very handy soon!
So true. I heard all the stories from my Mom and her sisters about the depression. My Aunt would always tell the story about how hungry she was during the depression and one day she saw a molded piece of bread on the side of the road and picked it up an ate it. They had vegetable gardens and raised chickens for eggs and to eat👩

Even growing up in the '70s this is the sort of thing my Mom or Grandmothers would make. Sometimes with Polish sausage added. Or just fried noodles as a side. Onions in butter or bacon fat is the smell of a home kitchen to me.
frugalaudio Most definitely! There is a calming effect when onions and butter/bacon fat are sauteed together, or fresh minced garlic with fresh minced parsley. If you want to make your house smell like a home cook in this manner. Your children will be imprinted with the memory ( subconsciously ) and perpetuate the tradition into the future. Also, bake homemade yeast breads/rolls to go along with these aromas - they will never stray far.

That sounds good but it's not the OLD WAY. It's a meal in it self. Remember they didn't have money for every thing. It was the depression. They could of had another meal with bacon and kielbasa. They knew how to make their money go a long way.

Actually, in Poland we call it "lazanki" (and often add some bacon to the cabbage). Haluski is the Slovak name. Slovaks also have a version of this dish with farmer's sheep cheese (bryndzove haluski).

That's very interesting. My grandma was born in Poland and came to the US at about age 6 in 1910. She always called it haluski. There were many Eastern European nationalities in our small town: Polish, Slovak, Slovenian, Lithuanian, etc. She may have picked up the name from one of her friends. She always made it with kielbasa or Polish sausage.
In Slovakia it is rezance, halusky is something quite different

I made this with Earth Balance vegan butter and it was delicious! I also added some vegan kielbasa.
I use country crock plant butter it seems to be the only Vegan butter I like the others just don't taste right. I hate the brands that use coconut butter it's too overpowering.. some margarines are actually vegan if they are oil / vegetable based .. There's an avocado butter I absolutely love .. I can't remember the name of the brand
If there's a version of vegan bacon, add it in just after you Sautee the onions. You're welcome.

yes, my mom too, always had the Crisco. I think there were a lot of unhealthy shortcuts picked up during the early-mid 1900's (e.g. teflon, plastics, processed foods), so sad. Overall most people ate and WERE fairly healthy, but unfortunately, it has caught up with society now.

It is delicious. My grandmother made this often. However, now as a more health conscientious 50 something adult I’d have to cut that one stick of butter down a lot and maybe omit a bunch of the noodles. Also, since there’s no protein it’s hard to call this a meal replacement....however it does make a great filler side for sure!

My mother would make this (she was 10 years old when the Great Depression hit) and would take a single, foot-long link of Kielbasa or whatever sausage we had, and add it it, sliced into super thin discs about 1/8 of an inch so that it seemed like a lot more than was really there. The flavor was outstanding, I always was happy when she made it. I think I need to make some soon!

@@candyjohnson3302 it is a survival meal; meant to stretch ingredients and the budget. nutrition is not the end goal but the butter provides the fats our brains needs, the cabbage is a source of nutrients and of course the eggs are in noodles so that is a small source of proteins. I think in todays day and age a lot of us take vitamins as a daily supplement. That being said, there will most likely be another meal served to people during the day, with who knows, meats and other vegetables or something. I know my dad brought home whatever he killed to help with what was going to be on the table but not everyone had a skilled parent who did that. I guarantee there is going to be some good eating here, which was a part of the reason we are all interested in the recipe.

In tough times, this is healthy enough to ensure you don't go to bed hungry. I'd rather have butter in my food than margarine. Cabbage is healthy. Onions are healthy. We can debate on pasta. There are many, many families in this world now, that would love to have a meal like this, because they have nothing.
Looks great. Just had the kids plant cabage in the garden. When it comes in we will try this.
Stuck in the house with the coronavirus stay at home order. I have all these ingredients plus a package of Hillshire Farms beef sausage. Think I'll slice it thin and cook them with the onions and cabbage. I can't help myself - I'm a meat eater! lol
We also are at home. Praying we all stay safe and healthy. That would be delicious adding the beef sausage. Enjoy👩

I love simple and easy and delicious low cost meals like this. Looks so good. Reminds me of stir fry so I would think rice would be good as well as the noodles. And left overs could make a nice noodle soup with added ingredients.

My mom made a version of this as well ... Hungarian version . Almost the same but you start with bacon chunks and render the fat off and use that for the onions and cabbage . Kaposztas Teszta. Which is the literal translation of Cabbage Noodles
“HALUSHKI”... is the correct spelling. Make your own dumplings with just flour, eggs, water, S & P. Drop by spoonful in boiling salted water. Much more delic!

I always make this when I make creamed chicken or paprikash. My Grandfather was Hungarian so we always had paprika from Hungary.
Yes! This is the way we always ate Halushki in my family, has been my favorite dish since childhood. This dish came from my Slovak side.
grew up eating this food from my Slovak and Hungarian family; and it was actually my favorite, never knew it was considered a depression meal. Makes me have even more respect for my culture and family recipes passed down through generations.

Ha ha ha " depression meal " I grow up eating halusky in 70es in Czechoslovakia ,they are different variations and one with cabbage is only one of them.
You can serve them with hungarian chicken paprikas / chicken stew or with cottage cheese and bacon ,which is traditional Slovak version called " Brindzove halusky "
