  • Hi everyone. In today’s ep I’m smoking spare ribs on the Oklahoma Joe’s highland. Total cook time was 6.5hrs. Rubs I used were Killer Hogs The BBQ Rub.     I have the same grill. I have had it for 5 years. Each year I give it a good cleaning with a wire brush on an angle grinder and spray it with Rustoleum high temp flat black paint. Still working like new.
    I have had some problems when placing the ribs too close to the firebox. Burnt ends. So I limit the ribs to three racks in the center of the smoker. If I do four racks, I lay three in the middle and one perpendicular to them at the opposite end. Otherwise...I LOVE my Highland grill/smoker. We have mostly stopped going to restaurants because I can cook MUCH better food on this grill for a fraction of the cost.
    I usually cook 3 hours unwrapped with my favorite pork rub, 2 hours wrapped after adding some honey and brown sugar, and 1 hour unwrapped again with my favorite glaze sauce.
    This produces beautiful "fall off the bone" ribs. Reduce the wrapped time a little if you prefer the bones not to fall off.
    After cooking (and cooling) I hose out the ash, use some "Easy Off" grill cleaner and hose it again. Then leave it open in the sun to dry. I cover it with an Oklahoma Joe cover designed for the grill.
    I live in Florida, so it gets used year 'round, 1 or 2 cooks per week. I expect the grill will last another 5 years at least and I bought it on sale for $199. You can't beat the value of this grill, even at it's regular price of $299.

    Paul them looked 1,000x better than what I had at 4Rivers BBQ. Nice Bite. Can’t ask more than that

      They were all good. Thanks for the kind words. I don’t like my ribs fall off the bone. I’m still trying to learn how my OKJ works as I’ve only used it twice now. I need to use it more to figure it all out. Thanks for watching brother

    Great looking ribs, Paul. Which rub did you enjoy the most on them? How doyou like that style of smoker? They are a lot more work than the WSM.

      Thanks GB. I enjoyed JB’s Hey Boy the most out of the sweet rubs but hands down I loved the it’s Incredible smoky jalapeño combo over the sweet rubs. I should get some of that killer hogs hot bbq rub to try. I like the offset style for the different taste on the meat. I’m still learning this pit out and need to use use it more to get the fire management down better. They are more work then the WSM. The hardest thing with the WSM is not got boxed while it cooks. Cheers

    I have this exact smoker I enjoy it very much considering the Pit Boss as well so I don't have to tend to the fire on very long Cooks how are you enjoying your Pit Boss versus your Oklahoma Joe

      I’m really liking the Pit Boss as it’s fast and easy to for after work. It cooks very good and little to no babysitting. I’ve figured out where it’s hotter and how it how it cooks. The longest cook I’ve done on is ribs for almost 6hrs. Not sure if I’ll do a brisket on it this year cause I love using my WSM for briskets. Ribs I prefer on the Oklahoma Joe just for the flavour. Other than the very little smoke flavour you get off the Pit Boss I have zero complaints about that grill. If you get one and are gonna be leaving it outside make sure you have a cover for it. It doesn’t have to be a Pit Boss cover unless you want it to be. I just helped my buddy unclog his auger on his cause he left it uncovered in the rain. We forgot to make a video of that but it is pretty easy to do if that happens. I might rip mine apart for a video on how to do that just cause he’s told me it’s a common issue with all pellet grills not just Pit Boss. Thanks for watching and your comment

      The only reason I didn’t get the Austin XL is cause it’s not available in Canada. I might still take a trip across the border and get one

    Been thinking of purchasing an Oklahoma Joe smoker how well do they work and are they worth it??

      Hey Shay! My pit works great for me. It’s all about the fire management. If you can learn the pit you won’t have a problem with it. Different factors play on how well the pit runs, mainly being the weather outside. I think this smoker is worth getting as I love the flavor it produces. I’m not sure how you’re thinking of running the pit, as a stick burner or just using charcoal with wood chunks? If you’re planning on running it with charcoal and wood chunks I’d really recommend a WSM over the Oklahoma Joe. If you have any other questions feel free to ask.

    Well in Texas we don’t “spritz” I’ve heard of apple juice spray, Never grape juice. We DONT use either. Rub, smoke slow just before it falls off the bone. And NO sauce! You put sauce on something that’s not really good

    How much cooking time do you get off a bag of charcoal

      Sorry I can’t answer that as I don’t use charcoal with this pit, I just burn wood splits in it.

      If I had to guess I’d say between 8-12 hours maybe longer for a full bag of Kingsford at 225-250 degrees

      If you’re talking about a charcoal basket I never got one either. The charcoal baskets only come with the Longhorn not the Highland if I’m correct.

      I have the longhorn reverse flow and it came with a basket.
