    When can I expect a research paper showing the depth of cut versus the probability of an even split?

      Great idea! I’ll put that on the to do list. One thing you would find interesting, apparently crack propagation proceeds at a 45° angle in ductile materials and a 90° angle in brittle materials. So, I could get an even cleaner split if I scored it and then froze it in liquid nitrogen to bring the cream into the brittle region

    You are the man.
    As someone who works in electronics and metrology stuff professionally… I’m usually stuck at home….. lonesome in my own lab.… Like Gollum stuffed over and some dark corner days at a time sing at exponentially smaller and smaller variances in numbers and math (math is something I’ve never been skilled at and have always had to work ridiculously hard for my little bit of understanding) 😂
    Therefore I stream TH-cam (mostly just the audio) about 12 hours a day seven days a week in my lab to keep me from going insane. And i’ve done that over the last 10 years with few breaks.
    You are one of the best and most talented/gifted people I’ve ever found through TH-cam. Very rarely I find folks like you… Who only make videos rarely. And I completely understand why….. you can’t waste a ton of time with videos and stuff because you have so much to offer the world. because of your insane talents and skill set… I completely get it why you can’t waste much of your time making videos for TH-cam.
    You have so much to offer and it’s awesome to know that folks like you are out holding the world together. even though I don’t get to meet them personally much of the time. Rock on brother 🤘😁👍🤘

    Great to see you back! I was thinking that the solution might be to use the scalpel to split the cream centre, then add a different type of cream that will break before be original cream does to join the two halves together again.

    Could be an IgNobel prize in this!!! Although the physics prize has already been awarded to Len Fisher for the optimal dunking time of a biscuit. Kind of close, although he was trying to avoid losing the glassy state instead of inducing it.

      Alan great idea! How do we submit? One improvement I think can be made here, there is a small dimple left in the center of the creme that I think is caused because the frozen creme is probably a ductile solid. If I instead use LN2 to freeze it, that will likely put it in the brittle solid region, which is important because shearing a ductile material results in a 45 degree crack but shearing a brittle material results in a 90 degree crack. All this to say that the dimple can likely be avoided by freezing with LN2, leaving an even more perfect split.

    I have an idea and you are just the man to make it a reality. The world needs an automatic mechanism to clean solar cells way up there on the roof. Water supply, squeegee, moving parts, sensors, all at deadly height above the ground!!! Maybe you could complete the circle and have the device use solar generated electricity…

    Other factors at play here: water in the creme freezing to ice, volume expands by 9% as ice forms, which might help crack propagation. Also sugar crystals might precipitate from the ice during freezing, contributing to crack propagation?

      @@iancharnas For your 2nd food science PhD, you can compare crack propagation of fractionated vegetable oil (current?), partially hydrogenated vegetable oil with trans fat (1970s thru 2000) and lard (pre 1970s). PS, love that slicer you invented! Patent it and sell it to Nabisco! I hope you get compensated for this video! It's gonna sell a lot of cookies!

      @@DFEUERMAN I was looking this up during the project. I was curious about Hydrox too. It turns out Hydrox is the original, and Nabisco copied them and called it Oreo, after the flower seen embossed on Hydrox (Oreodaphne). Hydrox stands for "hydrogen and oxygen" as in water. It was a statement against the unclean foods at the time (I think early 1900's) that included sand and other non edibles as fillers. Many foods were called Hydrox then and it meant "clean" to people at the time. Interesting no?

      @@iancharnas Wow, super-interesting! Thank you! Good 'ol Oxygen Di-hydride :) I wonder why the Oreodaphne was selected? Amazing how so many food brands start off as touting their superior quality or nutrition based on the understanding at the time (and good marketing.) These cookies have "fully alkalized" cocoa (aka "dutch process"), which is why the cookies are so jet-black. Exposing the cocoa to (i think) Potassium Hydroxide creates a distinctive flavor and is less bitter but has no antioxidants like the un-alkalized "natural" cocoa. Food for thought. Thank you, Sir Ian! Keep up the amazing work!

      Yeah that could be a fun project! I wanted to see that "surprise" though where I let my friends twist it to separate the oreos. I guess I could have used a thin metal wire to cut instead of the scalpel. Good to consider.

    After seeing your initial hot and cold experiments I thought the answer would be having the inside hot but the outside cold. Maybe microwaving the cookies then dunking them in LN2. Anyway, your creation at 2:10 is clearly the best way to consume Oreos without specialized equipment.
