As a child growing up in the late 50's/60's I remember having pineapple pie on Sunday mornings as a treat, but I can not find it in the supermarkets today. I will be trying this pie, because it looks like the ones I remember as a child. I like the pink glow pineapples that are being sold online. I think that they would also make a great pie. Blessings.

I think the key to this pie is using ripe pineapple, so whether you use fresh or frozen, make sure it's good. I've never had a pink glow pineapple, but I'm sure it would be good in this recipe. I will. I am sure fresh is better than canned, because of the metal taste. COSTCO has pineapple spears in glass jars - no metal taste. You really should try the "pink glow" pineapples, they are the same, but just a little different. I like them - but they are very expensive. Blessings!

Ever since I had a pineapple pie 40 yrs ago, I have been looking for a recipe. I think this might be the one. All the others make a custard type filling. This is the first recipe that is like a regular fruit pie. I'll let you know after I make it if this is the recipe Ive been searching for. I'm so excited to try this.

This was just okay. I think I might try cooking the pineapples like you would do with apples. It's missing something. Everyone liked it, but they didn't love it. I think it needs a spice. Like what cinnamon does for apples, but I can't decide what that might be without overpowering the pineapple flavor. Your recipe is a good start and it has me thinking but it wasnt 'it'. Thanks.
@@busterbrown446 I'm sorry that you were disappointed with the pie. I could see 1/4 of cinnamon being good in this (cinnamon and crushed pineapple are in a lot of carrot cake recipes). I think a bit of ginger might be good as well, especially with the lemon in this recipe. Like I said, I'm sorry you weren't wowed by the recipe--but I appreciate the feedback!

Hi, ML! I cut up the fresh pineapple one day and then froze it so that I didn't have to do all the work in one day--that would have been too much for my schedule. You could definitely cup up the pineapple and make the pie on the same day, though!🍍🥧
What is a 'par'-baked crust? Are you baking it halfway?? Have you tried beginning baking your double crust pies in an oven approx 50 degrees (F) hotter for the 1st 15 minutes & lowering temp to your normal baking temp? But, don't take your pie out while oven is cooling. I've been baking pies for over 55 years and had never heard of 'par-baking' crust. Also, I would suggest halving the amount of sugar in the pie, particularly if you are sprinkling more sugar on top! Lastly, an egg-wash on top crust makes it beautiful. I have had pineapple pie since I was a child. Was my grandfather’s favorite pie. Im not sure how it reminds you of peach pie...perhaps the power of persuasion?

You said a little bit extra sugar never hurts and this is totally wrong. You put so much sugar in pineapple. It’s crazy and sugar does hurt everyone.
