Oh sorry! I use a 2 1/2 to 1 ratio. Say if I heat 1 cup heavy cream, I use 2 1/2 cups dark chocolate. Heat the cream in the microwave for about 2 minutes. Long enough to see steam but not quite boiling. Add the chocolate and let it sit submerged in the hot cream for a couple minutes. Then whisk till smooth! If the chocolate still isn't completely melted, pop it back in the microwave for 30 seconds at a time until smooth.
I put the cake in the freezer for about 10 minutes first. Then make sure your buttercream is peanut butter consistently. Mayne a little looser. Too loose and it will get under the stencil. I think that is the key. At least for me;)
The way how I make my ganach is putting cream until become so hot then add my chocolate until melt completely then on fridge all nite net day I got use when I add oil

I actually have the same problem:( That's why I use tweezers and my fingers to get it on the cake. Sorry I don't have better advice!

You can, but in humid climates or fridges. I would just attach it after it is taken out.
