🍗 Peri Peri Chicken Recipe 🍗
Peri Peri Chicken is a spicy and aromatic dish featuring marinated chicken cooked with basmati rice.
Ingredients:
For the Peri Peri Spice:
1 tbsp sugar
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp coriander powder
1 tbsp Kashmiri chili powder
1 tbsp chili flakes
1/2 tbsp spicy red chili powder
1/2 tbsp salt
1/2 tbsp dried oregano
1/2 tbsp dried parsley
1/2 tbsp ginger powder
1/2 tsp citric acid crystals
For Marination:
2 chicken legs (separated into drumsticks and thighs)
2 tbsp peri peri spice
1 tsp salt
2 tbsp olive oil
1 tbsp oil for searing the chicken
For Cooking:
2tbsp oil
1 tbsp butter
1 medium onion, finely chopped
1 tbsp chopped garlic
2 green chilies, chopped
1 yellow bell pepper, diced
1 red bell pepper, diced
1 1/2 tbsp peri peri spice
4 tbsp tomato purée
Salt to taste
1 cup basmati rice, washed
2 cups chicken stock or water
2 tbsp chopped parsley
Garnish:
Chopped parsley
Method:
1. Prepare the Peri Peri Spice:
Grind together sugar, garlic powder, onion powder, coriander powder, Kashmiri chili powder, chili flakes, spicy red chili powder, salt, dried oregano, dried parsley, ginger powder, and citric acid crystals into a fine powder.
2. Marinate the Chicken:
Combine chicken pieces with peri peri spice, salt, and olive oil. Let it marinate for 20 minutes.
3. Cook the Chicken:
Heat oil in a frying pan over medium-high heat. Sear marinated chicken pieces for 2-3 minutes on each side until browned. Set aside.
4. Prepare the Rice:
In a kadai, heat oil and butter. Sauté onion, garlic, and green chilies until translucent. Add diced bell peppers and cook for 2 minutes.
Stir in peri peri spice and tomato purée. Add washed basmati rice, chicken stock (or water), and salt & parlesy, mix well and then Add the chicken pieces on the top, Cover and simmer for 10-12 minutes until rice is cooked.
6. Garnish and Serve:
Garnish with chopped parsley before
