Chamorro Latiya Recipe

  • Håfa adai, everyone!
    Here is a recipe for my favorite Chamorro dessert latiya. This is the number 1 item friends and family ask me to make for our get togethers.
    Ingredients
    • Sponge cake or pound cake
    • 2 eggs
    • 1 can evaporated milk
    • 1 tbsp vanilla extract
    • 1/4 cup unsalted butter
    • 1/4 cornstarch
    • Cinnamon
    • 7 tbsp sugar
    • 1 2/3 cup water
    Directions
    1. Slice cake to desired thickness and cover bottom of dish and set aside.
    2. In a pot add butter, water, sugar, and evaporated milk and put on medium heat to bring to a gentle boil.
    3. Mix cornstarch with water until you make a smooth mixture.
    4. Beat eggs and vanilla extract.
    5. Before mixture boils, mix well, and then gradually whisk in eggs & vanilla mixture making sure to keep whisking.
    6. When mixture is back to temperature whisk in the cornstarch & water mixture.
    7. Once custard thickens if there are any foam bubbles fold into the custard with a spatula and then turn off heat.
    8. Pour custard over cake and then smooth out with spatula.
    9. Sprinkle cinnamon on top and refrigerate for at least 4 hours. The colder the better.
