  • This is a super delicious, gluten-free bread recipe called Jowar Herb Bread. Jowar is also called Sorghum flour. This gluten-free bread is super delicious with all the spices and flavorings.
    Ingredients
    Jowar flour - 1 cup
    Warm milk - 1/2 cup
    Room temp milk - 1/2 cup
    Flaxseed powder - 1 tbsp
    Garlic powder - 1 tsp
    Yeast - 1 tsp
    Red chili flakes - 1 tsp
    Salt - 1 tsp
    Oregano - 1 tsp
    Olive oil - 1/8 cup

      1. 1 tbsp of flax seed powder can be replaced by 1 egg or 1/4 cup of curd.
      2. It is absolutely ok to replace milk with water.

    I have a question can I double the recipe for a bigger bread and use the same bread pan so the height of the bread is bigger??

    Madam thanks for this great recipe. However something goes wrong with my baking. Can u plz share the oven settings? I hv a old oven which has a max temp of 300 degrees. What shud be the preheating ? And when baking should both the upper and lower coils be heated

      The oven should be preheated with 200 degree Celsius (400 Fahrenheit) for 10 mins and then place the keep the container inside.

      yes, flaxseed powder is for binding. You don't feel the taste at all. Alternatively, you can use soaked chia seeds instead of flaxseed powder.

      Yes, Cover the kadai and preheat for 10 mins. Then put the bread tin on a stand and bake for 25 mins. Check by inserting knife. It should come clean and adjust time accordingly.

      Bread stays well for 2-3 days hence recommend to make smaller portions.
      Yeast is used as a leavening agent and can be replaced by either baking soda + lime juice or beaten egg whites.

    Is the flaxseed necessary ? Is it for binding? I have some fresh flax seed. Also can i use RAGI instead of Jowar? Lastly, just wondering if I can one use water instead of milk?
    Anyway, I am going to try this out with RAGI first and later JOWAR. Hope it comes out well.

      yes. flax seeds is for binding. You can use ragi or Bajra flour as well.
      Also you can replace milk with water.
      You can also replace 1 tbsp of flax seed powder with 1 egg or 1/4 cup of curd.

    It came out well but it's not big as a bread slice. I tried to double the quantity and tried with ragi as well. Taste is good. I think a single rise isn't enough. It needs to double rise. How do you achieve that? What needs to be done so that the bread rises the second time before we bake it?

    Can you tell the temperature to warm the milk. For example : For 1 cup 40 degree in Microwave.

      Yes, 1/2 cup milk is warm used to activate yeast. And the other 1/2 cup is room temperature milk to bind the dough. Texture is light and also taste. You cannot get as soft as Maida bread but this is pretty good if eaten fresh.

    Fantastic recipe ma'am. Thank you so much for sharing. This is my first successful gluten free bread. It's a keeper.
    I made a few changes which may help others who had a problem with the bread.
    Firstly i used NUTTY YOGI'S gluten free baking flour. Made the dough less liquidy as compared to what's in the video. Baked at 180 degree C for 20 mins and at 200 degree C for 20 minutes more.

      Preheating is important step.
      Prefer a tin container, usually for cakes silicone container is ok not for bread.

      Yes, I am using active yeast. Milk is luke warm. Make sure it’s not hot.

      Herbed bread is better with olive oil. But feel free to use vegetable oil (flavour less) or even peanut oil..

      You could add just plain water instead. Bread might turn little fry but brush with olive oil

    What can be the replacement to milk & sugar?

      You can replace milk with water or any other milk like - soy milk or almond milk.
      For sugar - you can add honey or maple syrup.

    The smell while baking was very good , but though I kept for about an hour it was not cooked properly. The outer layer became crusty but inside was semi solid . Can you please tell what could possibly have gone wrong

      This should not happen since I have had successful results every single time. Did you bake at 200 C (400 F)?

      You can try replacing milk with water. I am not sure how the outcome will be but if possible try nut 9or soy milk.

    If we increase the jowar aata to 2 cups rest of the ingredients shud be double in quantity.. Pls let me know

      You can but the flavour will be coconut versus Italian herbs. You can definitely give it a try.

      I would store in air right container for 2 days max. If you live in warmer temperatures then would recommend to keep it in the fridge. This bread is best eaten fresh.
