Try it with the prosciutto or pancetta diced a little larger, saute it crisp, remove from the pan, and along with the croutons, garnish the finished soup with it. It gives a nice texture to this very tasty soup.
I made this tonight, this is a beautiful soup. I put gruyere on top of the croutons and broiled it at the end. Magnificent with a caprese salad. Just WONDERFUL... Thank you!
You have made my IP a favorite kitchen tool, right next to my wok, rice cooker, bread maker, pasta maker, slow cooker, steamer, air fryer. I know that the IP can do many of these things, but not at the same time when preparing a meal. By the way I like gadgets.

I live a stone's throw away from Gilroy and attend their Garlic Festival at the end of every June, specifically for the garlic ice cream. Absolutely to-die-for! You don't taste the garlic immediately, it comes on as an after-taste that's just marvelous for any garlic lover. Bon appetit!
I'm only halfway through and I'm already a little in love. When I was pregnant (3rd and last kid, and that may be relevant) I craved roasted garlic. Good thing I didn't discover roasted garlic until then or he might have been my only child. A whole soup made of garlic and potatoes. I die.
Love your demo of your version of Roasted Garlic Soup!!!! Now, you make me realize I need to get another immersion blender (got rid the one I had because was too hard to clean IMO)...
Also, I am wondering if it might be good to make one extra bulb of garlic and a few more potatoes and strain them out before using the emersion blender and then add back in so you have some yummy chunky bites to eat in the soup. I love love love the taste of garlic and eating a roasted garlic clove in salads and think it might work good in this soup as well.
The great thing about immersion blenders is that you can control how pureed your soup becomes. I usually use it on my lentil soup to get the soup thicker, but not to puree the soup down to a smooth, puree soup. If you simply remove the blender before the entire soup gets smooth, you should not need to do any extra work. If you want to puree a soup though, just keep going until you have a smooth puree. Just remember to turn off the blender before you pull it out, or you will get splatters all over your kitchen!

Just made this for an office potluck tomorrow, I wanted to make it veg for my vegetarian colleagues, so I left out the prosciutto and used mushroom broth in place of the chicken, man is this gooooooood.
It needs a toasted New Mexican green chili flesh. Anaheim chili works OK, but the New Mexican is the best. I've lived in New Mexico, but the best soup I ever had was in Old Mexico. It was a clam chowder with the chili peppers flesh in it. Even the mild varieties add so much more depth of flavor! Want more flavor? Then use the chili and also some home made sour cream instead of regular creme. It'll never break and turn on you when adding to hot soup, and is a more complex flavor. Simply the best!
You should look up some recipes for Spanish Garlic soup which is a bit different but can be adapted for the instant pot too. One thing I enjoy about Spanish Garlic soup is that they slip a poached egg into the bowl of soup. I like the recipe here, but I have friends who are vegetarians who I think would definitely prefer the Spanish version (which the Spanish often make with water rather than broth.)

I am so glad you did part of it in a convection oven. I insisted on a microwave with a convection oven costing 4x's as much as a regular microwave and have had fail after fail in it which is embarassing me to death. this will be the first non fail i hope. making this in the next week as i have a big long list of recipe's i have promised my family.....put some of those croutons on the side so we can have more as we go.
