Enjoyed this video. Thank you. At 2:24:27 cooking your greens for 4 hours, in my opinion, cooks out all the nutrients. I prefer to just slightly wilt or cook the leaves and the stems I chop and cook longer to soften them. I love the energy, knowledge and time these people have given us. Namaste
Where do the nutrients in greens go? Into the broth.Only water soluable nutrients move into the broth which is consumed with the green. Fat soluable vitamins like K, A, D are made more bioavialble by the heat. This long cooking time also impoves the absobtion of the minerals which are not avaible unless the plant cell walls are broken. Our ancestors knew what they are up to. Wilted greens do very little for the nutrition but bulk the stools which is great, if that's what you're after.

It takes your endurance, true “flower power “ era wisdom like me, hey ho! @mammawedd widowed mom of 8, holistic organic mamma since the ‘80’s, finally deepening and broadening, reaching out into this wonderful herbal community. We should always share, educate and strengthen each other. So we don’t end up with the more proud, judgy, divisive attitude that destroys us from the inside. On the other hand, we all need to take clinical herbalism as an Honor, to serve others consciously and after true apprenticeship, deeper proven trainings as @phylislight points out.
