    I made these wings today. Amazing! That marinade really shines through. Not too salty at all. Just a hint of heat from the jalapeños. Doesn’t even need a rub (which I questioned when making it) because it’s flavorful all on its own. They were super juicy too. Made them on my Rec TEC with Hickory pellets and an “amaze” smoke tube as well for added smoke flavor since its cooking at high temp. I didn’t make the ranch or slaw. Didn’t need it. But I will try that version of the ranch next time. Seems interesting. I’ve made the regular ranch they show you how to make on here before already and it was great.

      Fantastic job!! I actually heard of beef ribs that are cooked for 17 hours. Cross hatch the fat cap, season and smoke at temp of 290 degrees. No wrap needed. Sauce not allowed. Served however w cucumber onion salad.

    Hey Chef Tom, I'd understand if it's for sanitary reasons, but Chef Eric said not to re-use the marinade...but is it because it gets too diluted to do any additional batches ? I was thinking you could cut them completely apart as he mentions and marinate for two hours, but instead soak one batch for 15 minutes, pull them and bag them while a second or third batch is immersed for 15 apiece and let all of them sit in bags in the fridge for one to two more hours to get the marinade penetration ?

    Heyyy ,Eric you did a nice job. You got more natural look and movement. May I suggest that if you’re quite feel a bit excited in front of the camera. You can play with your role. Create it, and fun with it. So your feeling and movement will get better and better. Hope to see you more on video.

    Love all this, the only thing I have an "issue" with is you're using the same gloves with the wings (raw) that you did with the slaw... think that's bad?

      Not the same. If you look closely you can see he is first using food handling gloves with the wings and then BBQ gloves with the slaw.

    After processing my own meat and thinking a little about it, the thought of eating the skin and blood vessels and such kind of grosses me out. I still love chicken, I will just be removing the skin.

    You can absolutely reuse the marinade. Some Chinese kitchens have marinades that have been used for years, replenished as necessary. He has to say that so he doesn't get sued when some idiot licks the raw sauce off their fingers and gets salmonella, because America.
