SILENT SOLO TRUCK Camping with my Dog Bailey - Coconino NF AZ

In this episode, Bailey and I found an amazing campsite in the Coconino National Forest for the night. It was very windy so we had to forego a fire and be super careful cooking with charcoal. It is now July and this will probably be the last trip of the summer with charcoal use, forest fire dangers are now extreme in Arizona so better to be safe and not risk it! We did make some amazing tacos and Pico de Gallo for dinner, enjoyed some star gazing and a relaxing night at camp!
We woke up to such a beautiful morning! As always coffee was first! Then we made a massive omelet and hashbrowns and enjoyed the morning with a nice walk before we headed out.

Pico De Gallo recipe:
-4 Roma tomatoes diced
-1/2 white onion diced
-2 jalapeños diced
-1 Serrano diced
-1/4 bunch of cilantro chopped
-Pinch of garlic powder or minced garlic
-Good pinch of kosher salt
-Juice of 1/2 a lime
Just multiply the ingredients to your liking for a bigger batch too! If you like it more spicy leave the seeds in the peppers and add another serrano pepper.

I’m ready for another trip! I’d like to go once a week if I could. Bailey is slowing down but she still loves it. I have to lift her into the truck and just move a little slower which is ok 👌. how long can you stay there for?
You can camp for up to 14 days for free! So blessed to have so much public lands here in AZ!
Dude that looked so good. How long do you marinate the chicken? Also Baileys a good dog. Mine would’ve snatched it right off the grill when I turned my back lol
Thanks! I try to marinate for 24 hours but usually at lease a couple hours is good. What kind of dog do you have?
@@IntoTheWildernessWeGo nice man me too I only use Italian dressing but now you’ve gave me an idea with the lemon juice and fajita seasoning. He’s a Maltese yorkie mix. Was a great dog until I had kids. Never would care about human food but once the kids drop food off high chair it’s all over he is 100% food driven now.

I love it. It makes such a smooth cup of coffee, easy cleanup, lightweight, simple setup. What do you use for camp coffee?
@@IntoTheWildernessWeGo I have a stainless steel french press or if I'm being lazy and have the generator running already I have a 12 cup mr coffee maker lol. Thank you! Bailey is a little over 9 years old. She loves camping and being out and about though!!! Do you have a dog?
