The choir is called, "Coral Black to Black", they're from Brazil. The original artist was Foreigner, then Mariah Carey covered it. His version is based off of Mariah's and he's done a couple of different takes on it but he changes it up a little each time because, Gabriel doesn't plan out all his runs and such in advance, a lot are improvised. There are some great online vids with him and his producer talking about how he arranges his covers, how he does the whistle notes, etc.
