    Have you ever frozen and then thawed tofu? Freezing causes all of the water to be forced out into ice crystals. When the tofu is defrosted the ice crystals leave millions of tiny holes in the tofu. Three things happen, one the water drains out without pressing (just make sure to lift the block off of the plate or container so the bottom doesn't sit in liquid), two the tofu itself becomes super chews, almost like chicken (though of course it doesn't take like chicken), and three it very literally acts like a sponge and soaks up any marinade you put it in so the flavor makes it all the way into the middle of the slices or cubes.
    I do this when I use tofu to make a Thai peanut curry. I make the sauce and simmer the tofu cubes in it for a few minutes before I add the stir-fried vegetables. I also combine it with dried and rehydrated porcini mushroom when using tofu to make "beef" stew. The beefy flavor comes from the porcini mushrooms. I soak an ounce of porcinis in a cup of boiling water. Then I strain the soaking water through a coffee filter to get the grit out. Then I put the frozen, defrosted, and cubed tofu into the soaking water along with the minced up dehydrated porcinis to sponge up that beefy flavor. You can also add a little tamari and/or miso to the soaking water to give it even a little more flavor. Other than browning the "meat", make the stew as you normally would, adding the tofu, mushrooms and broth at the start of the simmer.

      I have yes! Personally I don't love frozen and thawed tofu... the texture is a little spongey for me, but it's a pretty cool trick for sure :)

    • @papparocket
      @papparocket 6 ปีที่แล้ว +5

      You have a point about it being a little spongey and I like baked tofu for most things where I want a good chew. But with my Thai peanut curry with lots of Thai basil, crushed ginger and garlic with just the right amount of chilis, I have to say it is one tasty sponge!

    Next time you do the challenge I would weigh the tofu before pressing and then weight it again after pressing so you can quantify the results. I.e. you can measure exactly the weight of the water that has been released.

    Very entertaining video! I would like to say though that for future product testing that it is important to test them as fairly as possible. One element of fairness would be to use each device for the same time period. Another objective parameter would be to weigh the tofu block before and afterwards. This will tell you exactly how much water was extracted in the process. Subjective aspects such as texture are important as well, and you covered this, but I wonder if perhaps the cracks from the EZ Tofu press were from too much force too soon. This would tell me that it is important to become conversant with each product by using it a few times before reviewing it.

    Thanks so much for helping me make a decision! Making a video where we could actually see and compare the results was super helpful. Only thing is the bolts aren’t recessed but for a few dollars it works great! I stand it in end in the sink to drain.

    I use two plates, a towel and a stack of cookbooks but my sister has the easy tofu press and loves it - the one with the cranky handles. I would consider it. $100 seems way too pricey for a tofu press for me especially since it doesn't come with a tray!

    you were seeing which one compacted the tofu the most but isn't the goal to see how much water is removed by the press? using a kitchen scale, you could have weighed each one before and then after to see which one removed the most water. have the most compact tofu isn't the goal in my opinion.

    I use the Togfuture and I love it! As for doing it overnight. I've done that. But I have also done it in a couple.of hours and it's still done a great job.
    I start it on the first notch. After a few minutes I'll go down to the second and then the last one. You can get it very firm. It allows.you to have it as firm or soft as you want. So on that score it is very versatile.

    My first tofu press was delivered yesterday. Now this shows up in my suggested videos. I’m nervous to see if I bought a good one or not.
    Edited: mine looks like the Tofuture press, but is different. It has a spring inside and the sides just clamp down. No rubber bands, so it looks a little easier to close. I bought it because of the fact it was self-contained instead of needing to put it on a plate or in the sink.
    My home pressing method involves a watermelon instead of cans. lol

      I've had a similar one for years - at the time the inventor was selling them from his own website. Not sure if he sold or just isn't able to enforce the patent. It works great but is a bit of a pain to wash and often it ends up pressing unevenly into a wedge shape. Still miles better than the old cutting board and skillet method. Tofuture looks so much easier to use.

    so pleased to have found your channel. I took delivery of a tofu press today, and it was the tofuture. yey. I was so happy when it came out on top of your tofu trials. I'm in the UK and the ninja press didn't show on amazon. there are cheaper versions but you have to put weights on it the same and they are like baskets with holes and you wrap the tofu in cheesecloth to press it. so the tofuture is so much easier and neater and great for storing in fridge. I got mine to actually press homemade tofu, made with homemade soy milk in. so fingers crossed that works too.

    I was thinking that the simplest one, the hand-screw press, might have worked better if their instructions weren't to so aggressively tighten the screws. Aside from being the most affordable, it's the only one you could imagine place two tofu cakes on, or using the space to do two halves. It's also one that you could imagine making yourself (there is even an Instructable for one)

    a couple hours?! I have the Easy Tofu Press you tried and it gets the water out in like 20 minutes (but I guess they've updated now, because mine has slats on the bottom and a water catching tray, so no need to put it on its side or on a plate. I also just tighten it down at the start and don't keep doing it - whoops lol). It's so worth it. I used to do the first method using paper towels and I was tired of using so many paper towels and making a mess. But I also love that you can choose how hard to press the tofu. Great video!

    But I'm curious and plan to buy some and try it out.
    After watching this I think I shall try a modified combination version of two of the methods here. I shall wrap it in the towel, put a board on it, but rather than using cans or something balanced on it for weight I think I will use a couple clamps to press that board very firmly into another board, leave it for a couple hours, see what happens. Prop it at an angle to allow for water drainage. Am excited to try it out, lol.

  • @timc7543
    @timc7543 4 ปีที่แล้ว

    Would have been cool if you would weigh each block of tofu before pressing, then press it, then weigh it after. Then subtract the after-pressing weight from the pre-pressing weight: That difference would be the weight of the water that was removed (which is the name of the game). You could also express that in terms of percent weight reduction. That might be a bit more meaningful than how flat each squeezed it because the flatter ones probably got a lot wider (poisson's ratio for tofu?) without necessarily removing water.
    Thanks for doing this though, this is a big help.

    Cool idea, I do feel like this contest is a little bit of comparing apples to oranges? These three tofu presses are made from three very different materials - plastic, stainless and... silicone? They also have three very different prices, and I'm guessing are designed for different users with different expectations of their kitchen tools. Just my two cents. ~ John

      Yep, exactly, that's why I wanted to compare them to see the differences.

    I love the tofu warrior and worth the money and you won’t struggle twisting and stretching but it’s very costly! I’m all about stainless steel! Whoa!😳

    Aren’t the cracks a good sign? Meaning it squeezed the moisture out and is now ready to absorb all those flavors. After freezing it at least once of course

    • @Itdoesnttastelikechicken
      @Itdoesnttastelikechicken  5 ปีที่แล้ว

      In this case I think the cracks were just caused because I squished it too much and the tofu broke.

    You should have used a kitchen scale to measure the weight-loss of water. If the tofu are industrially made into bricks, the product should be uniform; thus, the only thing you need to measure as far as press' efficiency is water loss.
