I don't read museum signs when it comes to the dinosaur stuff but that's because information in museum is super basic and most palaeo students like me already know most of it. If it's an exhibition/exhibit on something palaeo based that I'm not particularly knowledgeable on or a new discovery or something then I read the informational boards
