I went to this nice Italian place in Salem MA, had the most wonderful experience when I asked the waiter if they made carbonara with no cream; the chef (lovely Italian lady) came out, asked who wanted the carbonara and promised to do the original (as seen above). Trust me, not everything needs heavy cream to taste creamy and rich. Give this dish a go and you'll love it. It's not a dish for vegetarians tho.

The original way it's cooked or how you'd get your carbonara in Italy there's no cream in it at all in America most places you'd order it from they'd make it with cream .... it doesn't need the cream to be creamy that's what adding some of the pasta water back in is for.... Italians take their food seriously and we don't like when it's messed up

Kid Chef they don't used "guanciale" too, but if you can't buy It , or you prefer parmesan you Can use It. For a good carbonara you Need a good pecorino cheese, aged but not too much because if It's too much aged It will be too salted and strong, also if you like pecorino cheese but not too much because It's so strong you Can use 1/2 parmesan 1/2 pecorino. Original recipe is very difficult to do in other country because of the availability of ingredients

I personally love carbonara, when I go to Italy it's the first thing I order when I get there, and the restaurant near my relatives home who I stay with, the waiter actually asks if I want garlic in it or not!
