I made this and it was amazing to say the least. By far the best meatloaf not only that I have ever made but the best meatloaf I've ever eaten! It was pretty big so I cut it in half and gave half to my adult son who lives alone (thinking he could have a couple of meals out of it) I no sooner arrived home from dropping it off and received a text from him stating "your meatloaf, didn't survive" and it was good! So, he ate it all at once! Thanks for sharing the recipe.
I've been making a cheese filled meatloaf for over 40 years....i puree the veggies/sauce/egg then mix into meat and fold in cubed cheese of choice...bake and eat.

Everything was fine, till the garlic and wine arrived... aaaaghhh for garlic. I'm not a garlic fan. it's too overpowering and spoils the flavours of the other ingredients. As for the wine, you may just as well add vinegar. Because when heated the alcohol evaporates and you're left with a souery vinegar taste.. It's worth trying. Definitely a winner without those two ingredients. Frying the onions first is a great move, especially if in some coke or soya sauce, to give it that brown look..

But even if you add it - in the end you will not feel its overwhelming taste. Since garlic loses its strong flavors when exposed to high temperatures and only a subtle spicy aroma remains
Even if she did use wine, professional chefs have been using wine in cooking since the day wine was invented. Are you saying that they are all wrong? How many Michelin stars do you have?

Yum! My mom chopped cheese into 1/4" cubes and mixed in so that's what we do. Usually some chopped bell pepper too
