    Mmm love Carlyle. It's such a perfect Holiday scotch with tons of baking spices, and an apple pie to me. Haven't done the 12 yet, but the base is great. Hmm...I never got sour on these bottles at all.

    A great MGP rye is Roseville Union. They make a BiB, 47% and cask strength. Fantastic stuff. And it’s an MGP label.

    If Texas distilling requires a shorter time in the barrel. Could the whiskey be moved into a "new" barrel to lengthen the process?

      Great question. With 3 upvotes so far, this question is demanding an answer. Or better yet, an episode discussing climate vs barrel size vs using more/less head/tail cuts vs length of time in barrel vs other techniques to either overcome the "cons" of Texas aging vs the "pros." Maybe purely as a matter of cost and business cash flow, keeping whisky in a Texas barrel for a shorter length of time is better.

    I picked up two bottles of this for $11.99 each at a local Total Wine. I am not a fan of peat flavors and this had none that i could fine.. I find this slightly sweet, some spice, oak, hints of vanilla, but all very low key. A smooth drink worth the price point.

    Didn't know George Remus was an MGP house release. I'm 2/3 though a bottle and it's quite good (with a kick). Overripe banana, caramel, and light brown sugar

      I ALMOST picked that bottle up today at Sam’s ($20)…but they had their own bottling from Bardstown that beat them out ($18). Definitely going to get G.Remus on the next trip…thanks for the info!

    What would be nice for the viewers if you guys put the tasting notes in the description because some times you guys rush through them or don't really go into what you're tasting. Suddenly boom the video is over and it can be missed from time to time. Great video as always.

    Most likely, the band's name is a reference to a Richard Brautigan novella published in 1967 also called Trout Fishing in America.

    omg - the mechanic dude from Wings is awesome. I remember liking him and that show. What's the wine channel he does?

    btw - I am proposing a topic for an ongoing series of videos that can or should be done with another friendly distiller in a different climate.
    The goal is for the same new make from one run from one distillery to be shipped to two different climates. Exact same new make. One big container, then divide it in half into 2 containers and ship one to Texas and the other somewhere else. Try to eliminate other external factors besides temperature. Such as sending it out to sea on a long voyage (isn't that a thing?). Or one location being coastal and one not.
    The goal would be for each "age-er" to try to create the same end result, same flavor profile. Essentially one has to do tricks that the other doesn't in order to overcome the difference in age that will result from the difference in climate. Barrels have to be the same wood, same char level, but can be different sizes. OK so maybe one might have to let the other get more tails or less tails (to go along with what Dan was saying), so how about one or two more extra barrels as "controls." but definitely same mash bill from the same grains and same farms.
    Everything that can affect the flavor and nose must be as absolutely the same as possible. The only thing different would be where on earth was it aged and for how long.
    Or some variation of the above .
    Or not.
    Have one of those hobbyist weather gizmos that can track historical weather data, porting live data to a website, and archiving past data for analysis.

    What would happen if you aged a distilled spirit in a non-wood container for several ;years in Texas and then put it in an Oak barrel? Does age alone change things, or is it all wood impact.

      Aging is not just about time. It's also about the liquid interacting with the container. If the container is steel or glass or some other similar material, time won't change anything.

    Hey Daniel, don't knock Rex's tan leather dad jacket, Mr. "Episode 51 leather dad jacket."
    Just to twist the knife a bit, my grandfather had one damn near identical it back in the late 70's/early 80's!
    But, to be perfectly honest...when I saw the jacket I first thought of Grampa and then thought "wow, that's actually...I mean...kinda somewhat cool."

    In a blend with 20 distilleries I am not sure you can pick up cuts in a whisky. Unless you're solely referencing just youngness.

      It’s the youth. Age will definitely smooth out the stuff that wasn’t cut in distillation

    Snagged this for a few hot drinks for Christmas and HATED the neck pour…then went back to it and also (like Rex and the Hobbit) found it dramatically improved.
    Wouldn’t consider it a sipper, but a great soft, raisiny Scotch for a mixed drink.

Y'all were all about the standard Sheep Dip but have NEVER even mentioned the Sheep Dip Islay. Peat heads? Hmmm. I know you have a bottle in there somewhere.
