  • We pulled this jar of grapefruit out of our refrigerator and tested to see if it was still good.

Great info, will add it to the memory bank as we will be planting citrus this spring. (Brown's and LA Early Satsumas)

Good varieties. As soon as the risk of freeze is over, I'll be planting more varieties.

Perfect timing. I have five citrus trees. Two are pomelo/mandarin (tastes like Orange Julius) which are great for juice. I usually mix two of those and two tangelo to get 2 cups of juice. I am OD'ing on Vitamin C and not making a dent in what is on the trees. If I only had the time to jar up a bunch, but I'm taking care of my mother who had a stroke and broke her hip on Nov 30 and an aunt with bad dementia, plus I was recruited to start teaching mainframe classes in March (plus tax time is here).

Wow busy busy! it's hard to consume all the citrus a few trees will give you. Good luck with everything. We are busy beyond belief also.

Adding to my previous comment, once the fruit has been harvested, grade it. Choose the biggest and best grapefruit to eat fresh. The small and misshapen ones for juice and the midsized will be for canning the pulp. Grapefruit is acid so it can safely be canned by water bath. Prepare the midsized fruit by scoring the rind but not the pulp, all the way around. Then score again at 90 degrees. You can then pull off the rind in four pieces. The best way to prepare the pulp is to “supreme “ the fruit. That means removing the pulp sections completely from the membranes. One way to do this is to score the sections from the back in the center. This will let you pull the membranes back and release the pulp. Put the pulp sections in sterile canning jars. In a pot, make syrup from sugar and water. Boil to allow the sugar to dissolve completely. Pour the syrup into the jars leaving an inch of headspace. Poke a chopstick or debubbler tool into the jars to release any air bubbles. Wipe the rims of the jars with a damp paper towel and put on the two piece lids. Process in a water bath canner for 15 minutes. You can process juice in a similar manner. You can also make marmalade from grapefruit. The rinds can be candied for use as confections. No need to take up space in the fridge for months for some questionable fruit experiment! The big payoff for growing fruit is to really learn how to utilize it for your family to enjoy! Best wishes!

It is truly amazing. I have never known a way to store raw fruit without it going bad and it all makes sense. Now because grape fruit seed extract is considered a full spectrum antibiotic. There is work to be done here if we can store raw foods. So we don't have to destroy the enzymes in a natural manner such as those grapefruit....What a game changer worldwide that could be !!!
