ah, i love it that you tell people to add salt AFTER cooking. i cannot believe how i learned so many years later that it actually makes for softer textured beans by adding salt AFTER they have been fully cooked.

Just curious… why remove the onion??
you can always remove it, let it cool, and then dice it to re-add to your beans. I've done it in the past, but I don't think it adds a whole lot. After simmering for almost 2 hours the onion flavor has really been infused, so it only adds a slightly different texture. Just preference I guess.
To stop the beans from crying
I did not have a whole or half an onion. I only had a half bag of frozen diced. So that is what I threw in there. And they will stay there too.

How does the cooking time change
if you soak beans first?
It's less (maybe by 30-45 minutes). Just go off of the softness of the beans as they are cooking to gauge cooking time.

Why add the onion and the garlic whole? Wouldn't slicing the onion and mincing the garlic make the beans more flavorful?
Not really, they are there to infuse the beans. You can chop them, it you prefer.
@@inspiredtaste that makes sense, to infuse the beans. Then afterwards just throw it in the trash/compost? Is there any other way to get some use out of it?
im sure u can use it maybe to make a broth or something or a soup or cut it up for other meals, dont throw it away in the trash

If I cook in instant pot do I need to drain the beans?
It's up to you. I like the cooking liquid (especially if I simmer it down a little so that it becomes thick.)
I have never been able to get my black beans soft to eat. I’ve added water and have left em for up to 4hrs on a low boil and still they won’t get soft like when I do pinto, I just don’t get it.
Next time add 1 tsp baking soda per cup of beans to your water; I had the same problem this past weekend.

Not for this recipe, but you can if you would prefer to. Soaking them would make the cook time a bit shorter.
