Special Sauce -
1/2 Cup (125g) - Mayonnaise
1-2 - Dill Pickles, Finely Diced
1/4 - White Onion or Brown (Yellow) Onion, Grated or Finely Diced
2 Tbsp (40ml) - Tomato Ketchup
2 1/2 tsp (15ml) - American (Yellow) Mustard
1 tsp (4g) - Smoked Paprika
1 tsp (4g) - Onion Powder
1 tsp (4g) - Garlic Powder
1/4 - Lemon, Juiced
Pinch of Sugar (Optional)
Seasoning To Taste
Method -
Add all the ingredients to a bowl and mix to combine. Store in the fridge until ready to serve.
Burgers Patties -
1 tsp (5ml) - Vegetable Oil
500g (1.1lbs) - Beef Mince 80%/20%
4 - American Cheese Slices or Cheese of Choice (try not to use the plastic stuff)
2-4 - Brioche Buns, Toasted
Iceberg or Romaine Lettuce, Shredded or Whole Leaves
1-2 - Tomato, Thinly Sliced
Pickles (Optional) - • 5 Minute Pickles #shorts
Caramelised Onions (Optional) - • Easy & Delicious Caram...
Seasoning To Taste
Method -
Roll out the beef mince into even-sized balls and shape into thick patties. You can weigh the whole amount and divide it by how many burgers you like.
Spread the butter over the buns and toast to your liking on the BBQ, in a pan, under a grill, broiler, or toaster.
Heat your BBQ to 240.c-465.f over charcoal or gas. Add a splash of oil to the beef patties and place them on the grill. Lightly press down with a burger press or spatula. Season one side only with salt and pepper and sear for 2-3 minutes. Flip the patties over and sear for 2 minutes. Add the cheese and grill for 1 more minute or until the cheese has melted. Remove and rest.
Spread the special sauce on the top and bottom buns. Add the lettuce, tomato, beef patties and top with pickles and caramelised onions (optional). Place over the top bun. Serve and dig in.

For those in Australia: Check your restrictions on using a wood or heat beads based Barbeque especially on extreme fire days or total fire ban days! Some BBQ’s are fine, some are not and most have restrictions, yep even if they’re in your backyard! Each state will have slightly different rules, but check online and check the day so you can make this amazing food safely and enjoy it with no worries!!

Hey Jack if we don’t have an egg BBQ, is it the same process on a charcoal bbq with this and your other bbq recipes or does anything change with the ingredients or cooking time?
Hey! It’s the same process. 2-3 mins on each side with the cheese added about a minute before it’s done 🙌

how long will the sauce last or can you do one for a smaller serving?
Sauce will last up to 1 week wrapped tightly in the fridge. You can definitely make a smaller amount. Either half or quarter the recipe

Hi Chef Jack that looks so good. I have never been able to find Monterey Jack cheese in stores. Where do you buy it? I shall keep in mind you are in SA I’m in Vic. Your sauce sounds pretty darn good and could go on many different types of burgers etc. I reckon it would be great on a steak Sandwich…now I’m salivating. I am having cannellini beans for tea tonight but wishing it was something just like this. Thank you for another great recipe Chef Jack. Hmmmm a burger/sandwich/ wrap, recipe collection would be great. Might have to find a way to print them all out and keep them in a folder to use cause seriously you have some great recipes for these. I’m not the biggest fan of ketchup as a single ingredient but in sauces like this, it works really well. You can’t taste it as an individual, it blends really well into the sauce
