    1 stick Unsalted Butter
    4 tbsp Chicken Fat *optional, sub out for another 1/ 2 stick of butter
    1 lb Bread of choice (454g)
    2 cups Cold Turkey or Chicken Stock (454g)
    1 large Onion, diced
    5 stalks Celery, diced
    5 cloves Garlic, minced
    1 tbsp fresh Thyme
    1 tbsp fresh Rosemary
    2 tbsp fresh Sage
    2 whole large Eggs, whisked (110g) *round to the nearest egg
