Feed your chickens any hot peppers you have in your garden. They will eat them up no matter how hot they are and your eggs will have this background taste of the peppers. My chickens go crazy over the peppers

Do you have a favorite recipe you can share that might not have any fish ingredients? I love kimchi and want to try my own but I'm allergic to fish so I stick with vegan versions but they're so expensive unfortunately.

Koreans do use their hands when making kimchi but usually use plastic gloves cause kimchi can grow bacteria that you don't want (like blue fuzzy stuff) If you do like he does, it's not bad per se, but I'd be willing to say that it cuts the shelf life. I kind of doubt it will cause any real harm though.
Well, making porridge makes perfect sense if you're making traditional kimchi, where you cut cabbage just in half, so pepper would really stick to all the leaves. But if you're cutting your veggies, there's no need to make porridge
