In Finland, just say "This tastes like sh*t!" if it tastes bad. We don't mind. We like honesty. Don't say "Taste's good" and face tells something else. Then we are offended.

I can tell you that everything in that first place you went came frozen in a bag. You can find fresh Vendace or "Muikku" in eastern Finland, but not in Helsinki.
