Don't tell anyone! Steak au poivre, the world's simplest pepper steak!

  • The best and simplest pepper steak or steak au poivre recipe you will find. Sometimes, less is more and this recipe is one of those. No chopping, no stocks, no rare ingredients or herbs required. All cooked on stove top.
    This restaurant recipe has been proven thousands of times. It was one of the most popular menu choices in my old restaurant. I’m almost ashamed to reveal how simple it is, but only for you, I will!
    You can use any cut beef you like, but tenderloin or eye fillet is usually the better option. After all, it is a special dish so why not go all the way.
    Try and crack the pepper corns yourself so you can the full aroma. Use a mortar and pestle or the underside of a saucepan. Dijon mustard is the only mustard you should use, so please, no substitutes! Buy a good brandy that you would enjoy to drink, or that you can afford. If you don’t normally drink it, get a small pocket size bottle. Remember there’s not many ingredients in this recipe, so buy the best you can within your budget. For the cream, use a heavy or thickened cream. The green pepper corns are optional, but I think well worth it. When you cook the steaks, use low heat so the pepper doesn’t burn. You want a nice crust, not a burnt one. If cooking well done or similar, probably best to use a lid to help it. You could also place the pan in a hot oven, but only if it’s already hot. Once cooked, leave to rest on heated plates in a warm spot. It should be just long enough to rest a few minutes. Any juices from the steaks, pour back into the pan sauce. Be very careful if you’re flambéing, do not try it unless you’re used to it and feel confident in a safe kitchen. Simply turn off the fire then pour in your brandy. Turn back on low after it’s cooled down a minute. Any ignition will be minor. Once the sauce has reduced and is ready, pour directly over your steaks and serve immediately. Don’t wait too long or it won’t look as good. So there you have it, a restaurant style pepper steak that’s so basic! Enjoy it with green beans and roasted or pan fried potatoes.

    My best friend (an excellent cook) made steak for me last night (med rare w/balsamic mushroom sauce). He also reminded me that, a few years ago, I promised to make him steak au poivre. He’s still waiting. Of course yours was the first recipe I looked at.

    I’m so glad you rewarded Whiskey for his patiences! Watching this video l realized, haven’t made Steak au Poivre since my Husband passed away. That was his all time favorite meal. I always added Madagascar Green Peppercorns, it’s definitely not “optional” as far as I’m concerned. I use to snack on them straight from the can. ♥️👍🏼👏🏼👏🏼👏🏼

    This has become my new favorite channel. I love your style and simplicity - less is more truly. I can't be bothered listening to people talk incessantly just for a basic idea for something different. It's not that I can't cook, I surely can but sometimes something different is wonderful.     Wow! This is so easy and decadent. I paired with Caeser salad and home fries. I did baste the filet mignon in butter and thyme after turning and added minced shallots and garlic to the pan sauce. This is wonderful.

    Wonderfully demonstrated with delicious results! When I season the filets I like to use brined green peppercorns because I think that they add a nice fruity flavor as well as the desired heat. They are also easier to apply to the steak. I also like to use Demi Glace as opposed to cream (although your use of cream is excellent).

    People in general mistake black pepper with/for hotness, hence chilies. Please do a couple of dishes where the difference between the two gets explained. Ground black pepper makes you sneeze, the other pepper makes you bleed.

    Look in the decor so simple can make interesting. Leave the peppercorn outside, I thing need have the leaf celery and need litter more balsamic.

    I have one word Joel………..STUNNING!……ok I have a few more words 😉 haha This is exactly how I cook my eye fillets, same techniques served with the same sauce (sometimes I change to mushroom sauce) but exactly the same way. The only thing I haven’t done is flambé, which watching you in this video has given me new confidence, so why not next time. And I always cut my own steaks, never under 2 1/2 inch thick.     Chef I could hug you for that ending....yeah for whiskey.....steak au poivre is not One of my favorite, it is MY FAVORITE WAY TO HAVE STEAK....PERIOD!!! Alor chef merci....this is my favorite video, seeing whiskey get his chunk of meat. Bravo whiskey.

    I've made steak au poivre which I love, but I've never added dijon to the sauce! I'll have to try that.

    You can add brandy straight to the cream n mustard too, deglaze it!! Chantelle n you can even take to a steak Oscar n add crab to the sauce fer fun.

    Love all the new videos I saw in the email this week! I saved almost all of them, including this one. You might think about adding amazon links to the unique and unusual ingredients you use sometimes. Like those green peppercorns. I dont keep those on hand, never even used them. But now, since I have seen this recipe, have a great need to make it and have absolutely no problem supporting what you do, I would much rather purchase them via a link from you than just randomly on Amazon or some other webpage. :) Hint Hint. Thanks again chef, for so many great new recipe ideas!

      @@TheLiving74 he is working for his money. So why shouldnt he get it? Also, if I want to spend my money on Amazon I would rather do it supporting someone whose recipes and content are actually meaningful and useful to me. I pay for cable and watch cooking shows on those channels where those people get filthy rich. And yes I may have made some of their recipes. But I couldn't tell you how many of Chef Joel recipes from recipe30 I have actually used. It's been quite a bit. My family loves them all. I'd rather support him and other quality TH-camrs instead of people like Ree Drummond the pioneer woman and Guy Fieri. They are filthy rich. I'm getting richer so what's the difference? And one last thing, I'm pretty sure you have no idea how much money he has or makes, and it's really none of your business.

    hello Joel clarified butter and olive oil is definitely a temperature difference. I think olive oil is not that resistant to heat. but a great video. Whiskey also cuts a fine figure. Like

      Olive oil is very resistant to heat, as long as you don't smoke it, it's still the healthiest oil to cook with despite what you hear. But it has to be real EVO, so many claiming to be, are actually made with a high percentage of vege oil not olive. Buy from boutique makers, don't trust big companies, even Italian ones.

    I am going to baste mine with butter, rosemary, and garlic. Also its better if you hard sear it and finish it in the oven.
