Bayou Classic Banjo Cooker

  • In this video I set-up my new Bayou Classic Banjo Cooker KAB4. At first I was not sure which burner to purchase, so I called up support at Bayou Classic and after discussing my brew kettle size and needs they suggested this model.
    It has a 30 PSI adjustable valve and weighs about 24lbs. While it will burn a lot of fuel, hopefully I can boil eight gallons of water in about 20 minutes. After my first attempt I realize just how much heat this thing can crank out! This is a solid piece of equipment.

    I had a local welding shop make a wind screen to fill the gap from the original wind screen to the bottom of the pot supports. 20 buck, huge improvement

    You won't get more than 150,000 BTU using the variable 30 PSI regulator. (Ruby Street did some testing on this). On the other hand, unless you have a real large kettle that you have to heat up quickly a lot of water or wort, you probably don't need that much, and this burner will do just nicely, and not guzzle up so much fuel. It's a nice burner (I bought one myself), and it burns nice and quiet. It also appears that Blichmann uses the same single cast iron burner on their stands, though the feet supports are more rugged.

    I was thinking of purchasing this burner and occasionally throwing a 20" cast iron skillet on it. Do you think temp control would be manageable at all with this burner on it's lowest settings or would I just end up scorching everything? Also is the fuel burn on a 20lb cylinder reasonable at a really low settings?

      I think it would be too hot. Wind is a big factor with efficiency and temperature control so shield it as much as possible.

    Mine stopped producing flame after a few months of storage, how do I fix it?

    Why not have the flame on the bottom? Why the thin piece of metal underneath? What btu does it put out?

      The metal between the kettle and the burner is a heat shield (biabbrewing.com/brew-equipment/brew-kettle-heat-shield-build/). It's there to protect the thermometer, sight glass (if you have one) and keep the ball valve handle cool. I was told by the manufacturer that the burner puts out between 185K-210K BTU.

    How low will the heat go..using it for cooking meat and broth for canning an also a pressure canner..

      Temperature wise? I'm not sure but it does adjust down pretty low. Wind can affect it as well.

      I have the Stainless steel version. It is nice I don't have to worry about the paint melting or corrosion, but it doesn't look pretty after one use. The extreme heats change the look of the Stainless on the upper half of the heat shield significantly. Bayou Classic seems to have changed the design on this burner. The wind shield is now moved up several inches to where it is just under the pot. I assume they did that either to provide better wind production or to lose less heat (since you basically have a contained area all the way up to the pot).

    I have a question. You said you use a 13.6 diameter pan with this burner? or is that too small?

      Bayou Classic support said 14" but my kettle is 13.6" and it works fine.

    Do you know how many inches between the 10 inch burner and the "Seat" of the Kettle?? Where the Kettle rest.

      About 4 1/2" from the burner to the bottom of the kettle.

    I bought the double jet burner Because I plan on doing boils. I was told that this would work better for my 100qt pot. Was I told wrong?

      KAB4 is designed to hold pots up to 100 quarts, KAB6 can hold pots bigger than that.

    does it say not to use tape on the orifice where it screws into the cast? (the part with the spring)?? Thanks.

    What is gas consumption per hour at this burner or for how long the just one cylinder (20lb) of gas ? I was searching this info but they write only 0-30psi presure.

      How long does the average tank last?"
      It depends on how much demand is placed on the tank by the appliance.
      Propane contains approximately 91,000 BTU's per gallon. If a consumer
      uses a propane tank to supply a grill that placed a 30,000 BTU per hour
      demand on the tank, a tank that has 3 gallons in it would last for
      about 9.1 hours. Variances in the weather as well as the rate of demand
      placed on the tank (such as operating the grill at demand levels above
      or below 30,000 BTU's would either reduce or increase this time)."

    Does anybody here have experience with using the KAB4 with low heat? I've read that it's difficult to regulate low heat on this burner. I would like to use this for more than just boiling, but I don't want the food to burn.

      I've found what helps is to put a shield around the burner so it has less temperature change from the wind. That definitely helps keep the temperature more consistent.

      @@biabbrewing a ha. do you have any tips for what could be used? I don't weld, so I would need to get something that I can cut with a grinder... maybe a small metal trash can. What size is your shield?

      The plot thickens! Apparently Bayou Classic changed their design. The one in the video has the burner placement bars (or whatever they're called) high above the windshield / burner. The new design has the windshield higher up, touching the burner placement bars. That's the kind I have. Apparently too many complaints about the wind making it difficult to change the temperature...

      Yes. It's well built and does a great job. I think you get a lot for your money and it should last a very long time.

      gotcha,,I read one review where one guy was bitching abt bottom of keggle being black...from years of using oxyacetylene torches that is usually is an adjustment issue...is that what you found with the air flow adjustments? Also , I have seen guys say it is too high as far as the pot height from flame...did you try modifying that ? Are you using keggles ..and how long does that take to heat...thanks-Scott

      The only issue I had with the bottom of my kettle getting black (not using a keggle) is from the paint that initially burned-off the finish from the stand that the kettle sits on. I am really using the smallest diameter kettle that this burner actually is suited for (per Bayou Classic support - mine is 13.6") and have made no modifications.
      The time it takes to get to temp has many variables including initial water temp, outside temp (winter vs summer and sun), wind, and how much propane I feel like using. I have better luck when I build a wind shield around the set-up (as with any burner).
      I'd say on average, I get about 8.25 gallons to strike temp in about 30 minutes or so.

      Hmm ..sounds good .Yea I was trying to put a 3 keggle system without having to realize a couple months later that I should have got this or that ...so it seems like you like it which seems like other do too . I saw some guy destroy it on Amazon and say he should have bought the blickman..which he did later . Just a huge amount $$ for that stuff . Everyone else seems to agree that the Blickman is better on fuel...which I wonder if it is because of the high height that pot sits up...seems logical ...lower the pot less fuel to make flame reach up that high...unless i am missing a major law in Thermodynamics !

    It is better to use a low setting on the burner because the pot is not efficient at conducting the heat to the water or absorbing the heat form the burner , so all of the excess heat is wasted . these days that is not a good idea . Or you have more money than brains .
