Easy Keto Lunch/Dinner: Queso Chicken Burritos

Ingredients
3 Chicken Breast
1 Tbsp Taco Seasoning (to taste)
1/4 Cup Pico de gallo
1/2-1 Cup Shredded Cheddar Cheese
One package of low-carb tortillas
Queso
1 Cup Cottage Cheese
1/4 Cup Greek Yogurt
2 Tbsp Salsa
2 Tbsp Enchilada Sauce
1 tsp Celtic Salt
1 tsp Garlic Powder
1 tsp Onion Powder
Directions
Cover your chicken with taco seasoning
Place your chicken in the instant pot
Add a half a cup to one cup of water
Press the pressure cook button and set it for 12 minutes unless it is frozen then do it for longer. Also make sure that the top is on sealing so that all of the steam doesn’t come out
After it is done cooking, let it release naturally for at least five minutes
Once the chicken is finished, remove it from the instant pot and shred it
Set it aside in a bowl. To that same bowl as your shredded cheese and pico de gallo.
In your blender mixed together all the ingredients for the queso sauce once it is blended and smooth add it to the bowl with your chicken and mix to combine
Once it is all combined start, rolling it into burritos
Once your burritos are rolled if you want to eat them for supper, bake them at 350° for 8 to 10 minutes
If you want to freeze them -individually, wrap them with cling wrap and place in a gallon Ziploc bag in the freezer or refrigerator
Make this recipe into a double or triple batch, and have more leftovers in your freezer

I do actually look up my taco video. It was one of the first ones I ever did so it would probably be at the beginning of my videos and I made homemade tacos in it that were keto.
The ones that I used from the store said that they were keto on there, but they did have gluten in them, which I usually do try to stay away from
