Hearty Ukrainian Borscht with Lentils and Mushrooms

- Today, we're making a delicious and hearty borscht @MatusyasKitchen that’s packed with vibrant flavors and nourishing ingredients! This recipe brings together lentils, beets, carrots, potatoes, and cabbage in a rich, aromatic broth. With a touch of paprika, dill seeds, and fresh greens, it’s a comforting and delicious meal. Let’s get started and create this mouthwatering borscht together - and don’t forget to top it off with a dollop of sour cream for the ultimate treat!
Ingredients:
3 medium-sized beets, 1/2 medium-sized carrot
500 g cabbage, 5 potatoes, 1 tomato
1 onion, 3-4 cloves garlic,
250 g lentils, 3 brown mushrooms
spring onions, fresh dill and parsley
1 tspn dill seeds, 1 tsp paprika, 2 bay leaves
black pepper and salt to taste, 1 tbsp tomato paste
1 tbsp tomato paste, 3.5 litre water
Preparation:
1. Cut the onion and place 1/4 of it and 2 bay leaves in water. Bring it to a boil.
2. Meanwhile, chop onion, garlic and mushrooms.
3. Rinse the lentils under cold water
4. Cut and chop beets.
5. Add the lentils to boiling water, reduce the heat to medium, and cook for 5 minutes. Skip off any foam.
6. Preheat a skillet and add vegetable oil. Sauté the beets over medium heat.
7. Chop carrot, then add to the beets in the skillet and sauté with beets. Add paprika.
8. Add beets and carrot to the broth.
9. Chop potatoes and add them to the broth too.
10. Stir-fry onion, garlic and mushrooms. Add them to the broth.
11. Add dill seeds and salt to the broth.
12. Slice the cabbage thinly, add to the borscht.
13. Cut the tomato and greens, then add them to the borscht. You can also add 1 tablespoon of tomato paste to balance the sweetness of the beets.
14. Turn off the heat and let the borscht rest for 30 minutes. Serve hot with sour cream.
