Okay so I tried this for thanksgiving. I've never done green beans except out of a can to feed my house. (Dont judge me!)But I made it for about 20-25 people. I had about 3 1/2 bags of fresh green beans, 3 turkey necks, and I only used 1 can of diced tomatoes. I had to cook it all in 2 pots but it came out GREAT! I didn't do any measuring when it came to the seasonings but I just made sure to at least coat the top of the pot with each seasoning. By far the best Shring (lol) beans I've ever had! Looking forward to using some of your other recipes!

I just made these without the turkey necks and cayenne pepper Sunday and they were good! The two grocery stores I went to were out of smoked turkey necks and I just didn't want to add the cayenne. Next time I will make them with smoked turkey necks.

I have never heard of anyone saving old oil or anyone putting oil in string beans. I have heard of people saving bacon grease and I save mine in a crock and I use that when cooking string beans. I love ham hocks with my beans. But your beans look great. ( my mother was from the South )
it adds flavor. just like with Collard greens..my grandma puts used grease in the greens..how Much depends on the amount of food. but it doesn't make is greasy. but adds a lot of flavor.
no matter what we fry with oil..if it's a lot left in the pain. we just pour it into the grease jar. so ours is blended with flavor. chicken, pork, fish, eggs, potatoes..just all the flavors.
+Sarah Jester Just don't save FISH fried oil. I learned that one a while back. Like you, I use a teaspoon of bacon grease to a pot of beans, but this recipe looks ahhh-may-zing! Also, as LaQuasea stated, it's not "old", just used. If it gets old, it tastes old. Also, there are metal cans with filters on the top to capture the chunks, and lids for safe storage. (I'm sure a quick google could help you find one)
