HEY FRIENDS! I simply wanted to point out something about the Agave syrup used in this video. In the Tommy's and Classic Margarita recipes , when I use Agave syrup, it's a 2:1 syrup by weight. So 500gr of agave nectar for 250 gr of water. But in the Cordial, it's the pure Agave nectar without dilution. Thanks for watching and have a great day! Cheers! P.S. Question about the orange saline solution: I weighed 1 gr of sea salt then added 10 gr of orange bitters, but the salt didn't dissolve completely. I ended up having to use about an ounce of bitters. Did I screw it up? Does my scale suck?
I bought it at Alambika in Montreal. They ship in Canada but if you are outside of Canada, I also linked some in my description. Such as Alambika’s website. Cheers
why use citric acid/ peels instead of lime juice? when clarifying other cocktails that would normally call for citrus, should i be considering citric acid instead of the juice?
@Truffles On The Rocks Will the balance be off on your version if using Dry Curaçao? I love your versions of cocktails because they are really perfectly balanced but I fear the Cointreau.
Aaron, I PROMISE you it will be great with Curaçao and I share your opinion about Cointreau; it’s good for this famous pancake recipe (crêpes suzette) where I live, but Curaçao is the stuff I’d use for drinks every time and it’s not even close. Cheers!

I like a crisp and green Blanco in my classic Margarita. Repo can always be used, the taste will be slightly different but it’ll work. I would use Anejo for a more aromatic Margarita. Maybe a riff on the classic to make it more “wintery” with spices or something
I never understood why SAQ’s selections were so different than the LCBO’s. Yes, they’re two different government entities, but come on, they’re right next door!

Quite frankly, I use what I have which is most of the time homemade clear ice.

Hum that's weird! I think it might be your scale the problem. Just measure 10 ml of bitters for 1 ml of salt then. It will be similar. Cheers!

Not sure to understand the question: in this case I used citric and peels to mimic fresh lime juice, to have a clear look without clarifying it.
Fresh lime juice has a shelf life of about a day, so this seems like a great way to batch it and have ready in the fridge.
