Capers are a wonderful idea with their citrus flavor. I live in the Midwest U.S. (southern Illinois) and it's hard for me to get these here but I loved them when we made them on the grill with just barely charred crisp edges. I'll have to drive across the Mississippi River into the next state to buy these. It's worth it lol.
Skate is the best fish. It absorbs flavor from spices and seasoning like no other fish. The texture is smooth and almost like silk. You don't have to worry about biting into bones which is a huge plus. And I find the slight tinge of ammonia adds even more depth to its flavor.
SM ray med ray only use wing spy catch me is a release at other than that we cook the whole thing up put the whole Ray on the fire and get a big score marks all along and put garlic all the whole Ray took the whole way up little bit Old Bay we put on it black pepper and salt that's it you cook the whole thing up with water underneath steam it a little bit so it flakes off is a real good taste to the rain other than that that's it it's a release it release The Big race you will keep the medium and small but if it did take a big Ray would probably cook the whole thing up on an open fire or use it for fertilizer for the farm
Jiffy mix pancake mix jiffy corn mix black pepper cayenne pepper red pepper crab boil seasoning or Old Bay teaspoon white pepper mix it all up dip it an egg put it mix it in a corn batter or the fried fish batter use corn oil and deep fry raising and then we dip it in hot sauce or butter and Old Bay and garlic that's it fish and chips on a sandwich or a taco Red wings they're okay
I had skate wing at a restaurant in Honfleur, France. It was honestly one of the best fish I ever had.

I'd definitely add some salt before pan frying it.
