I made them in a tomato sauce at the weekend and served with potato and Jerusalem artichoke mash with a bit of smoke tofu alongside and broccoli greens - magic. Thank you.
I cant tell you how happy i am to have found you! I came across these beautiful humongous beans both red and white and had no idea where they came from, i just said they taste like cheese, so for thanks giving i will make this wonderful dish. Mine are not even dry, so i dont have to rehydrate them because they were freshly picked. I was so excited at the enormous size, which i had never seen before, i was thinking whats the best way to prepare these beans. I will blend the white & purple and do it your way. I will be making it soon! 1 lb Giant Beans (soak in water for 24 hours) 1-1/4 cup Greek Extra Virgin Olive Oil 2 Onions 2 Carrots 2 Celery Stalks 2 Cloves of Garlic 2 TBSP Tomato Paste 14 oz Diced Tomatoes Water as required Salt & Pepper to taste Set Oven at 375 Degrees Chop vegetables and put in pan with tomato paste and put in the oven for 15 minutes. Take vegetables out of the oven and add beans, diced tomatoes, pepper, (add salt at the end), mix. Add olive oil and slowly stir the mixture. Bake for 1 hour, but check at 30 minutes to be sure it has enough liquid in it. (He doesn't say so in the video, but I am assuming that is what the water is for in case it appears dry at the 30 minute mark.) Also when you check it at 30 minutes stir it.

Similar recipes have people boil the beans for up to an hour before baking. As long as the beans have been soaked for 24 hours and you don’t add salt to the end, is it really okay not to boil them first? How much baking time at 375F without boiling them?

Can you use butter beans? I have fork hook beans that are giant butter beans. I bet it will work they are good in everything.

At least an hour and a half.. and put enough water in the pan because it’ll evaporate
