Vassal Knights is my favourite vassal. Unlike most other nations, they can complete a big portion of their missions tree as a Subject Nation. SO you can get claims on the Holyland and let them do all your converting for a long time, then annex them after you have completed their mission tree.

As for sieging coastal forts. I believe you misspoke when you said it is normally worse to have a coastal fort if your enemy has a fleet. I believe how it works is that siege time for a coastal fort is slower than normal, UNLESS the adjacent sea tile is blockaded, so having coastal forts and a dominant navy actually makes coastal forts better than inland forts (of the same level, and without local defensiveness bonuses - obviously).
Yeah, coastal forts are better than inland ones. Navaly blockading them simply brings them back to inland fort level. The only downside is that they can be barraged using ships without a need for artillery.
I might be alone in that but I like to see a game till like 1700's to see the scale of playing with tall ideas & policies, and how it affects the late game

For naval force limit, you can also mothball ships that you don't need and their maintenance doesn't hurt you as much. You can keep your heavy ships mothballed in between naval wars, for example.

technically, you can ask your allies for your (or your subjects') cores for favours. Of course, it takes a lot of time, but if you want to keep your allies for RP purposes, then that's a pretty cool option.

Land maintenance is underrated if you’re just doing nothing maybe your Japan and you’re waiting for the right moment to attack Ming or you’re England colonizing and doing nothing you can get a land maintenance advisor to lower the upkeep cost of your entire army and I think even navy this will allow you to save up more money to develop or have a little more fuel in a war this can even help you afford a bigger army overall since it can reduce the upkeep by 10 ducats (that happened in my Japan campaign)

Playing in Italy is the best, infinite gold and you don't care about coalitions because what can they do? I have mountain forts preventing entry and the biggest fleet on mediterranean sea.

You get 1 copy of the trade good modifier in that province no matter how many of that trade good you actually produce, even if you produce less than 1 of that trade good. The amount of that trade good you produce determines how much production income you get and how much value gets added to the trade node.
