- Chef Suresh Pillai is an Indian born British Chef and restaurateur. He has now started his own restaurant chain brand called Restaurant Chef Pillai. He has worked in several top restaurants in London including Veeraswamy and Gymkhana. He has also contested in British TV Reality Show MasterChef :The Professionals. He left his career in London to join as the corporate chef and culinary director of a Five Star Hotel called The Raviz.
He had a difficult childhood and is a self-made man who slowly worked his way up in the hotel industry. He was a chess player and participated at the state and national level. He was the under-18 champion of Kollam district He started his career as a waiter in Kollam and then slowly made his way to being a cook. he has worked in Kozhikode before he moved to Bangalore and worked in Coconut Grove. He recreated an original recipe of Kerala and gave it his twist. It is one of the most sought after recipes on the tube today called the Fish Nirvana. Later he moved to the Leela Palace and worked his way up. Later he moved to London and worked in Veeraswamy, Darbar restaurant, Hoppers. In 2017, he contested in the British reality TV show MasterChef: The Professionals (series 10) on BBC Two. He is also very popular on social media for his inimitable style of presenting.
In this conversation of three parts, with the host Dhanya, Suresh Pillai retraces his journey. He talks about why he made the career choices that he did, what kept him going and motivated. He talks about his early days of struggle and how he slowly rose to the position that he is in. He talks about how he constantly kept himself motivated and inpsired many others to follow suit. His recipes carry the heritage of Kerala cuisine in its flavour and how he is so proud to serve it to his customers the world over. He talks about how playing chess influenced him to think ahead and make his next moves. Chef Suresh Pillai talks about the food poisoning incidents in Kerala and makes an observation about why such cases are on the rise. He talks from a larger societal perspective as to how one needs to elevate the standard of life in Kerala. The business perspective of food business and why is it considered tricky is delved into here. Chef talks about his family especially his mother and his wife who have helped him shape who he is today. In this two part series there are many valuable insights, life lessons and stories that one can take away. His is the story of a man through sheer hard work and determination changed the course of his life.

I've underestimated this man a alot.. but after listening him talk, i got to know i was so wrong. Being a master chef he talks very little about food, and more about life and its nuances which fills us with inspiration. There is so much special about chef pillai. I recommend everybody reading this comment to watch his talk series in safari tv.

I really could not digest how he talks about his wife, how she is the only one cooking at home.. how only she had to adjust according to his life.. and talking about what she did as blessing is really the glorification of all these. I really could not stand that. And when he refers to cooking at home, he is referring only to women. Patriarchy is so loud.
