The reason they changed the BFG is because having so many projectiles on screen at once would slow the game to a crawl every time you fired (not a problem on modern computers obviously, but would be in 1993).
I can see why they changed the BFG... It spams plasma balls everywhere, and would cause lag on slow computers. Therefore ID changed it to fire the large green ball, as you see in today's DooM.
There are some source ports that can restore the original BFG functionality. There are also mods, like Brutal Doom or Project Brutality, that add weapons and one of them is a fast-firing BFG that indeed just spews a large amount of plasma.
And probably by accident too, since the gun was supposed to shoot 40 projectiles instead, but it was to laggy and according to John Romero it "Looked like Christmas", so they used a hitscan spray attack instead. (0:59) - decino
I had a random late night idea for a modernized BFG 2704. Rather than the big orb of the 9000 with its passive all-encompassing tendrils, it's just one from the gun itself so you actively choose which demon gets popped in exchange for ammo efficiency. Think the Gluon Gun from Half-Life.
