The boards can be controlled via PWM, USART, i2c & iBus.. I'm assuming you're passed the hurdles now but PWM signals seem to be the easiest.. majority of people are using a simple potentiometer connected to the control board to test the wheels, with ease.
Just to update, I was planning to follow this video up with a part two but unfortunately with the virus I've been unable to make it home to continue. Hopefully in the near future things will clear up and I can keep working on this!

I have used other electronic 3-phase drivers on these hoverboard motors with limited success as I find the motors resonate at a certain speed which cripples their speed. I also considered reprograming the on-board chip, which many people do, but that is an irreversable step. Alberto Technologica from Brazil (in Portuguese) has done what you set out to do successfully (uTube) but I haven't been able to translate/understand completly his approach with the necessary confidence to get started. Just thought I would share some thoughts?

The hoverboard doesnt use gyroscopes. It uses bilateral load cells to define the pressure from each foot.
The gyroscopes keep the board balanced and self correcting. It doesn’t determine the speed.
