My go to meal is stir fried Hot Italian sausage, peppers, mushrooms, onions and garlic. I boil the sausage first poking them with a fork or knife while they're in the pot so they aren't greasy. Let them cool, cut them up into 1" chunks then throw everything into a deep stir fry pan with just the garlic as seasoning. The peppers release a ton of moisture so the shrooms don't dry up and you don't require any oil.

Amoung other sightseeing events we took the Amtrak Cascades train to Bellingham along the Puget Sound shoreline. Beautiful and relaxing. The train stopped in Fairhaven just south/west (like a mile) of Bellingham. A CHARMING tiny quaint old area with restored buildings, shops, bike and kayak stores, restaurants. Very walkable. Excellent food and we're coffee hounds like you. Took a city bus into downtown Bellingham and just wandered the streets. Sunny, views over looking Puget Sound, lots to see, eat, drink, check out. Everyone was very friendly and helpful. Also very walkable. We took a local bus to our motel near by Western Washington University. Picturesque wooded hilly campus. Brings back great memories. I love you guys! Your attitude to the struggles in life is awesome. For too long I responded to life struggles with depression. Struggles really are just life and having the attitude of expecting them makes all the difference. I have been living the "van life" since 1993! Had some periods of apartment life in that time between then and now, but this is probably how I will retire. I started with a 26' sailboat. Seven years I lived on my boat. Necessity later had me in a subaru. Then my truck. Then I bought a bed camper for my truck. That is where I am writing you today. I plan and hope to sell an invention I have so I can build my next dream...a live-aboard seaplane. Your van design is awesome. My invention could really help nomadic people with electric power. Anyway, I am really bouncing around with this letter. Just want to say I really like you both and you are the kind of people I appreciate most in this world. I get it. My goto meal is a family tradition, it's rigatoni pasta and Portuguese Gaspar's chourico. We like the regular the key is the the longer it cooks the spicier the sauce is! The chourico adds so much flavor and it'is so easy to make, just cut up the Chourico make sure you take the wrapping off and cook in a pain for a couple of mins until brown and then toss it in the sauce and let simmer, then just boil some pasta to your liking and that it! The sauce we like is Hunt's Red Tomato Sauce, yes you can taste the difference!
Put turkey kielbasa, sauerkraut , red potatoes cut in half, cook in one large sauce pan covered mediium heat for 30 minutes perfect hearty meal. Serve with bread and mustard.
Allie, get a 5 gal. bucket with pop on toilet seat and lid. Line bucket with 2 plastic bags. Tie bags with twist ties, put bags in outdoor trash receptacle. Voila! No poop in van, no cleaning out bucket. Just wipe off toilet seat & lid with wet wipes. We love your vlog! The live one was so cool!

Slices of French bread, put tuna salad on top, a slice of your favorite cheese & a couple spears of asparagus on top. Put under broiler until cheese is almost melted.. yum. Also, any kind of bread, cut in triangles. Mix ground beef or turkey, diced onion, diced up cheese. Anything else you might like. Put on bread with fork & broil. Not long just make sure meat is fully cooked. Some quickies for you. I just recently discovered your channel I love it. I enjoy seeing all of your adventures and know how. You make awesome videos & I appreciate all the work you put into them. You're a great couple & thanks for sharing.
My go-to easy dinner recipe (...well, easy with a full kitchen) is vegan rice bowls: sautéed tofu, field roast or Italian vegan sausages; 1-3 Trader Joe's falafel balls (microwaved 1.5 min.); sautéed onion and bell pepper; steamed broccoli and carrots; shredded kale and spinach; fresh basil or cilantro leaves; served on top of 1 cup of rice cooked in a rice cooker--which is SUPER easy. Top it off with some Thai chili sauce, Sriracha, and TJ's Island Soyaki sauce to taste. We often just throw in other leftover veggies if we have some. Takes 20-25 min. I imagine you could make similar rice bowls in your van kitchen fairly easy. Tasty and healthy.
Growing up in a Mexican household, I learned to love warm corn tortillas with cotija cheese and any type of salsa on top! You can also slice the cotija and slightly saute it on a hot griddle, it gains a wonderful chewy texture!
Easy dinner...BLT. Usually two sandwiches per person. In Scotland, we learned to make them using a soft bun... lightly coated with butter, a Canadian style bacon, lettuce and tomato. Yummy.

Amatriciana, Carbonara dal ghetto romano (no cream!) and pantry Puttanesca. The Puttanesca was taught to me by a food writer who said you can keep all the ingredients in the pantry so there's always something you can 'just whip up' . The Amatriciana and the Carbonara can be made vegan with Portobello mushroom slices and a little Liquid Smoke. Love Bellingham and Galbraith. Was a roadie when I moved to town but now my road bike sits on its rims and the mtb gets regular workouts! Love your van and videos!
My favorite easy meal is burritos. I’ll make marinated steak and/or chicken in advance, then keep all the ingredients in Tupperware, ready to go. Then it’s fast... takes some planning though.
Get biscuit dough and flatten each to 5" circle. Cook meat, saute onions and mushrooms. Chop up small and place in the middle of dough. Add shredded cheese. Fold the dough to seal and cut a hole on top. Cook and enjoy!
My go to dinner is cajun chicken Alfredo. Make pasta/rice, Rub some Cajun seasoning into chopped chicken breast, sprinkle some more seasoning into Alfredo sauce (I just use a can from the store) until the sauce is light tan. Quick, two pan dinner, costs like 4 bucks.

go-to easy dinner: toasted ciabatta sandwich - tapenade + fresh basil + sliced avocado + roast cherry tomatoes + rocket + toasted pine nuts - I chop the basil fine and fold it into the tapenade before spreading it. I roughly chop the rocket as well: you wanna keep those pesky greens under control ;)
Curries are always a quick two burner meal for me, main ingredient being vegetable, fish, shrimp, chicken or beef, your choice. With various pastes, you can make it mild to wow! That's spicy!
Quick food go to's: With stove: salmon patties and an herbs de Provence aioli (will share multiple recipes if provoked) Without stove: 3 bean salad! (2 cans green beans/1 can garbanzo/1can kidney bean add diced onion, celery, and whatever else- I like hearts of palm and olives, douse with italian dressing and let chill for maybe 30 minutes)

My go-to recipe is zucchini pie. Mix everything in a large bowl: 3 cups shredded zucchini (approx 2 large zucchini, ends removed, skins on), 1 large onion chopped, 1/2 cup grated Parmesan, 1/2 cup oil (veg or olive), 1 cup Bisquick mix, 4 eggs beaten, salt & pepper to taste. Pour into a greased 9 inch pie plate. Bake at 350F for 35-40 mins until golden brown at the edges. Will appear soft and puffed on top at first but settles into quiche like consistency. Delicious hot, room temp or cold. Freezes well. Inexpensive and yummy. Btw if you don’t have Bisquick you can make your own: 1 cup flour, 1/2 tsp baking powder, 1/2 tsp sugar and 1/2 tsp salt. Enjoy!!!
Ramen with fried gooey egg = Boil water with sliced carrots & poor into noodle bowl with shredded raw cabbage. Top with buttery fried gooey egg & red boat fish sauce, chili garlic sauce, or sriracha. Lived off this vanlifing in New Zealand, super easy and delicious
Shrimp fried rice. Fry (leftover?) cooked white rice in oil, with egg that has been scrambled with a little oil (that's how you get little flecks of egg), finely chopped green onions, precooked tiny salad shrimp, and soy sauce.

Buy a turkey breast and roast it and refrigerate it. Cut off slices for sandwiches. For dinner in a fry pan, sauté portobello slices in olive oil, with chopped onions, garlic, kale and either sliced or chopped turkey. You can also put in a couple of tablespoons of the turkey drippings, salt and pepper. Mix it up and serve. Turkey sausages are good this way too. You can vary the vegetables. Swiss chard, broccoli, yellow or green squash, string beans, or whatever is in the fridge. Watermelon cut in pieces makes a good desert. I usually have roasted turkey breast in the fridge. Can you roast in the oven as you drive?
Easy, Quick - Ezekiel Bread Toasted with whipped cream cheese - topped with sliced red onions, capers and smoked salmon (or whatever smoked fish you can get your hands on). boneless chicken breast, organic, whole wheat pasta, pesto, frozen organic peas, skillet the chicken slice up in bitesize chunks, throw the peas in the pasta near the end of the boil, mix it all together. I usually get at least two days out of this.

Quesadilla's! Buy a Rotisserie chicken. Tortilla's, Block Colby cheese, get a pint Restaurant salsa (usually cheap) Shred cheese,Heat your chicken after pulling apart- lightly blacken your tortillas, add veggies. (I keep Blackened bell Peppers, onions in baggies Refrig) after all meat, veggies heated, add cheese to tortillas, Flip- eat with salsa. Easy- Fast. OR with Rotisserie Chicken, add Michelinas Alfredo noodles (frozen-but put in pan with veggies/ chicken you like-Stir) Done.
Healthy fried rice. You can pre-cook the rice and keep it in your fridge or freezer. When you are ready you can chop up whatever veggies you have and soy sauce. Its quick and easy, and a great warm meal when you are not in the mood for cold sandwiches.
Add some sautéed tofu or "Short-cut" type chicken for protein! (I'm a bit of a protein Nazi). Although real fried rice has scrambled egg in it for protein but I'm not a scrambled egg fan.
At Walmart I get those frozen bags of veggies that you just “steam in the bag” (microwave). I also love ❤️ the potatoes wrapped in shrink wrap cooked in the microwave (lots of TH-cam videos on this). Easy peazy.
Go to dinners: 1. Pasta with mushroom, onion and any other leftover veg lying around, sauteed and reduced in chicken/veg stock with a large tbsp of ragu and tomato sauce. After the sauce has reduced to about 1/3 add a couple of large spoonfuls (1/3 to 1/2 cup) of the pasta water and reduce again to desired density. Add pasta to sauce and mix well - add a handful of breadcrumbs to thicken further if needed or pasta water to thin. 2. Quesadillas: cheese, mushrooms, avocado. And if that's too labour intensive, 3. Cereal. Soups: Cauliflower + anything (asparagus, broccoli, green beans, beets, etc). Boil/steam veg until tender, drain & blitz in blender. Season to taste then sprinkle with smoked paprika, ex virg olive oil and maybe a small dollop of sour cream (creme fraiche if you have it), horseradish or blue cheese flakes.
In the Summer I usually put together a plate of cheese, salami, fruit (apples and/or plums) crusty bread or whole wheat crackers and a glass of wine. Most of our real lives are boring but your still fun to watch. Frank is very cute.
Open face roast beef sandwiches. Good quality roast beef from the deli. Package of instant au jus package of brown gravy mix. Make the au jus, put the roast beef in to warm it up. Place beef on some good bread and top with brown gravy. Yuuummy

In the same pan, scramble some eggs with cheese, veggies, anything you like. Add the tortilla strips back in with a bunch of salsa, to coat everything like a sauce. So good!

Also, go-to-dinner for me is veggie buritos (or you can add any type of ground/sliced meat you like). But, with each layer add different seasonings to add different depths of flavor, so the rice, the pepers/onions/mushrooms, fresh spinach & tomatoes, salsa and wrapped in a garlic or tomato basil wrap. So filling, and delicious.
My favorite scene of Nemo is Dory talking to the whales. You crack me up talking to Frank. As for go to food I take some pita bread and fry it on both sides with olive oil. Once fried put your sauc and cheese preferences and bake till the cheese is melted. It's delicious and super easy.
Get Purdue shortcuts-type cut up chicken or left over rotisserie chicken scraps and mix it with salsa (to taste), warm it up in the microwave for about 30 seconds. Take two flour tortillas and sprinkle shredded Mexican cheese blend (or Cheddar or Jack or any combination thereof) on each tortilla and microwave for 20 seconds till it melts. Then, put the chicken filling on one side and place the other side on top to make a "sandwich." (You can add cooked rice if you have any left over into the filling to make it a bit more filling for carb loading for biking days). Grill on griddle until it's crispy (don't forget to flip it). Criminally easy chicken quesadilla that my son loves!!! Can serve it with heated refried beans from a can or some salad. Of course, sour cream and guacamole on top are great too but if you are on a budget, that could be a bit of a luxury:) Please let me know if you want my cheater's guacamole recipe:)
Veggie wrap! Spinach tomato goat cheese jalapeño avocado cucumber Turkish pepper olive and olive oil. Or whatever else you can role up in a wrap. Kinda like a sandwich!
You are such a nice and sweet couple! Thanks for the uplifting videos! Here is a nice dinner receipt: Since you have an oven, you can do it nice and easy in tops 30 minutes. Slice up an eggplant which should be enough for both of you. Put a slice of red onion then a layer of either some ham or mushroom on it. I mostly eat veggie so I usually put some fake meat instead. Then you wanna put some cheese on top followed with slices of cocktail tomato or olive. Make it even nicer by adding some pumpkin or sunflower next to them. Of course salt goes on every layer and spice it as well according to your taste. 15 minutes in the oven on C200 followed by 5 min in grill mode will give you an awesome and healthy meal. You can boost it up with some sour (oat) cream but it you may eat it American style with ketchup or mayo instead. I hope you'll enjoy! :)
Best simple dinner....chili and cinnamon rolls. Believe it or not was a favorite high school lunch for many of us from Fort Dodge, Iowa from the 70's. Since the early 2000's have been camping with a group of buddies each spring and fall at a campground in northern Ohio and they have become converts to this sweet and salty dinner which we enjoy the first night of the campout. Not the healthiest, but a terrific guilty pleasure.
Lemon Pepper Shrimp w/Fabulous Toast. Lemon Pepper seasoning on shrimp and saute in butter until cooked. Toast is Baguette sliced just like in ur video then slather a mixture of Mayo (I prefer Miracle Whip), Sun Dried Tomato and Fresh Shredded Parm onto bread slices, put into oven at 350 and under 15 mins all is done. Dipping the Toast in the lemon butter sauce from the Shrimp is awesomeness. Luv Luv Luv all ur videos.
Love the video! Not sure if you guys use a slow cooker, but I just love the convenience of throwing a bunch of ingredients in and letting it cook. Also having quick re-heated meals for days is a plus lol! One of my favorites is a kind of spicy chicken dish. Just throw in: chicken thighs (or breasts)about a pound or two depending on how much chicken you want in it, a can of black beans, bell peppers (Trader Joe's has already chopped up frozen peppers which makes life so much easier), chopped sweet potatoes (again Trader Joe's sells these in a bag), about a cup of chicken broth, a jar of salsa, a few cloves of garlic and let it slow cook on low for 4-5 hours! You can get some microwave rice to go with if you want, but otherwise just garnish with a little lime and cilantro!
My go to meal? Here’s 2. I always have fresh veggies of some sort and often have some cooked quinoa. Tonight, no quinoa so I cleaned up some farmers market romaine, preparing for a salad. Then I pulled out some freshly roasted Brussels Sprouts, popped them in a small pan to heat and added cut -celery, mushrooms, cauliflower, squash and whatever else that needed to be eaten. Then I mixed them together with spices of choice and put them on top of the bowl of lettuce. I added avocado, dressing, and there you have it. Bread and lunch meats are out of the question for me, and I feel a 100% better since making those choices. Thanks for asking. I enjoy all the videos you two do, yet this one brought me ‘into your home’. Nothing like seeing the day to day grind, or seeing you’re ‘friends’ routine activities. That’s a relationship builder, right?
Bellingham is rad! Yeah, y'all must've gone through Seattle traffic, Everett traffic and all those towns up I-5. I have a Nu-Wave oven and I keep a 5 or 10 pound bag of potatoes and a french fry splitter and I air fry french fries in it. Really good with cheese, bleu or ranch dressing or left over taco chili. I also like Ramen with veggies and spices and pre-fried tofu. Boil the water and toss it all in!
evening food - a 3 egg omelette, cover with a Spanish style tomato Frito (natural pureed tomato with spices) sprinkle with hand torn spinach, and add extras to taste, ie tuna chunks, chicken, turkey or any meat chunks or even corned beef, add a little tomato ketchup and add salt and pepper to taste and a good fresh bread to accompany. Delicious!

Hi, guys loving your videos. You could give what we call down under, “Boats” a go. So to make Boats, you need to cut a bread roll in half and toast it lightly either side. Then you add salsa to the inside off the top and bottom. On top of that, you put hot salami and then grated cheese on top. That goes back under the grill to melt the cheese. You can change up the ingredients to suit your taste. If you try them, I hope you enjoy them. Keep up the great work.

My go to meal is stir fried Hot Italian sausage, peppers, mushrooms, onions and garlic. I boil the sausage first poking them with a fork or knife while they're in the pot so they aren't greasy. Let them cool, cut them up into 1" chunks then throw everything into a deep stir fry pan with just the garlic as seasoning. The peppers release a ton of moisture so the shrooms don't dry up and you don't require any oil.

Oh I almost forgot. Add Tabasco. Well, to everything, yup.

My wife and I visited Seattle for our 20th anniversary in 7/2013. Amoung other sightseeing events we took the Amtrak Cascades train to Bellingham along the Puget Sound shoreline. Beautiful and relaxing.
The train stopped in Fairhaven just south/west (like a mile) of Bellingham. A CHARMING tiny quaint old area with restored buildings, shops, bike and kayak stores, restaurants. Very walkable. Excellent food and we're coffee hounds like you.
Took a city bus into downtown Bellingham and just wandered the streets. Sunny, views over looking Puget Sound, lots to see, eat, drink, check out. Everyone was very friendly and helpful. Also very walkable.
We took a local bus to our motel near by Western Washington University. Picturesque wooded hilly campus. Brings back great memories. Thanks again!

I love you guys! Your attitude to the struggles in life is awesome. For too long I responded to life struggles with depression. Struggles really are just life and having the attitude of expecting them makes all the difference. I have been living the "van life" since 1993! Had some periods of apartment life in that time between then and now, but this is probably how I will retire. I started with a 26' sailboat. Seven years I lived on my boat. Necessity later had me in a subaru. Then my truck. Then I bought a bed camper for my truck. That is where I am writing you today. I plan and hope to sell an invention I have so I can build my next dream...a live-aboard seaplane. Your van design is awesome. My invention could really help nomadic people with electric power. Anyway, I am really bouncing around with this letter. Just want to say I really like you both and you are the kind of people I appreciate most in this world. I get it. Been around the world twice in my travels. I, too, am a free spirit. Thank you for sharing your experiences. You guys put a lot of quality into your work and it shows. My goto meal is a family tradition, it's rigatoni pasta and Portuguese Gaspar's chourico. We like the regular the key is the the longer it cooks the spicier the sauce is! The chourico adds so much flavor and it'is so easy to make, just cut up the Chourico make sure you take the wrapping off and cook in a pain for a couple of mins until brown and then toss it in the sauce and let simmer, then just boil some pasta to your liking and that it! The sauce we like is Hunt's Red Tomato Sauce, yes you can taste the difference!

Put turkey kielbasa, sauerkraut , red potatoes cut in half, cook in one large sauce pan covered mediium heat for 30 minutes perfect hearty meal. Serve with bread and mustard.

Allie, get a 5 gal. bucket with pop on toilet seat and lid. Line bucket with 2 plastic bags. Tie bags with twist ties, put bags in outdoor trash receptacle. Voila! No poop in van, no cleaning out bucket. Just wipe off toilet seat & lid with wet wipes. We love your vlog! The live one was so cool!

Slices of French bread, put tuna salad on top, a slice of your favorite cheese & a couple spears of asparagus on top. Put under broiler until cheese is almost melted.. yum. Also, any kind of bread, cut in triangles. Mix ground beef or turkey, diced onion, diced up cheese. Anything else you might like. Put on bread with fork & broil. Not long just make sure meat is fully cooked. Some quickies for you. I just recently discovered your channel I love it. I enjoy seeing all of your adventures and know how. You make awesome videos & I appreciate all the work you put into them. You're a great couple & thanks for sharing.

My go-to easy dinner recipe (...well, easy with a full kitchen) is vegan rice bowls: sautéed tofu, field roast or Italian vegan sausages; 1-3 Trader Joe's falafel balls (microwaved 1.5 min.); sautéed onion and bell pepper; steamed broccoli and carrots; shredded kale and spinach; fresh basil or cilantro leaves; served on top of 1 cup of rice cooked in a rice cooker--which is SUPER easy. Top it off with some Thai chili sauce, Sriracha, and TJ's Island Soyaki sauce to taste. We often just throw in other leftover veggies if we have some. Takes 20-25 min. I imagine you could make similar rice bowls in your van kitchen fairly easy. Tasty and healthy.

Growing up in a Mexican household, I learned to love warm corn tortillas with cotija cheese and any type of salsa on top! You can also slice the cotija and slightly saute it on a hot griddle, it gains a wonderful chewy texture!
Easy dinner...BLT. Usually two sandwiches per person. In Scotland, we learned to make them using a soft bun... lightly coated with butter, a Canadian style bacon, lettuce and tomato. Yummy.

Love the haircut! my go to meal is just pan seared chicken with broccoli and homemade gravy. I have a rice cooker and pressure cooker that I will be bringing to my rv so I will be making that a lot!

Sono una donna con un cuore italiano e amo cucinare. I have three pasta dishes which the sauces for cook in the same time as the pasta, or about 8 minutes. Amatriciana, Carbonara dal ghetto romano (no cream!) and pantry Puttanesca. The Puttanesca was taught to me by a food writer who said you can keep all the ingredients in the pantry so there's always something you can 'just whip up' . The Amatriciana and the Carbonara can be made vegan with Portobello mushroom slices and a little Liquid Smoke.
Love Bellingham and Galbraith. Was a roadie when I moved to town but now my road bike sits on its rims and the mtb gets regular workouts! Love your van and videos!

My favorite easy meal is burritos. I’ll make marinated steak and/or chicken in advance, then keep all the ingredients in Tupperware, ready to go. Then it’s fast... takes some planning though.
Get biscuit dough and flatten each to 5" circle. Cook meat, saute onions and mushrooms. Chop up small and place in the middle of dough. Add shredded cheese. Fold the dough to seal and cut a hole on top. Cook and enjoy!

My go to dinner is cajun chicken Alfredo. Make pasta/rice, Rub some Cajun seasoning into chopped chicken breast, sprinkle some more seasoning into Alfredo sauce (I just use a can from the store) until the sauce is light tan. Quick, two pan dinner, costs like 4 bucks.

Hi, go to meal: salmon, chilli and ginger fish cake with roasted Mediterranean veg. Store bought fish cake and 10 minutes to prep the veg and heat the oven.
go-to easy dinner: toasted ciabatta sandwich - tapenade + fresh basil + sliced avocado + roast cherry tomatoes + rocket + toasted pine nuts
- I chop the basil fine and fold it into the tapenade before spreading it. I roughly chop the rocket as well: you wanna keep those pesky greens under control ;)

Curries are always a quick two burner meal for me, main ingredient being vegetable, fish, shrimp, chicken or beef, your choice. With various pastes, you can make it mild to wow! That's spicy!

With stove: salmon patties and an herbs de Provence aioli (will share multiple recipes if provoked)
Without stove: 3 bean salad! (2 cans green beans/1 can garbanzo/1can kidney bean add diced onion, celery, and whatever else- I like hearts of palm and olives, douse with italian dressing and let chill for maybe 30 minutes)
Go to quick meal: taco in a bowl. Any meat, taco seasoning, cheese, and whatever veggies we have laying around. Thanks for taking us along on both your adventures and non-adventures!

My go-to recipe is zucchini pie. Mix everything in a large bowl: 3 cups shredded zucchini (approx 2 large zucchini, ends removed, skins on), 1 large onion chopped, 1/2 cup grated Parmesan, 1/2 cup oil (veg or olive), 1 cup Bisquick mix, 4 eggs beaten, salt & pepper to taste. Pour into a greased 9 inch pie plate. Bake at 350F for 35-40 mins until golden brown at the edges. Will appear soft and puffed on top at first but settles into quiche like consistency. Delicious hot, room temp or cold. Freezes well. Inexpensive and yummy. Btw if you don’t have Bisquick you can make your own: 1 cup flour, 1/2 tsp baking powder, 1/2 tsp sugar and 1/2 tsp salt. Enjoy!!!

Ramen with fried gooey egg = Boil water with sliced carrots & poor into noodle bowl with shredded raw cabbage. Top with buttery fried gooey egg & red boat fish sauce, chili garlic sauce, or sriracha. Lived off this vanlifing in New Zealand, super easy and delicious
Shrimp fried rice. Fry (leftover?) cooked white rice in oil, with egg that has been scrambled with a little oil (that's how you get little flecks of egg), finely chopped green onions, precooked tiny salad shrimp, and soy sauce.

One of my go to quick meals: simple pasta dish with garlic, olive oil, oregano, spinach (or whatever veggies you have. Asparagus is really nice too.) and sliced grape tomatoes.

• Deli chicken tenders with fresh fruit & steam vegetables
Buy a turkey breast and roast it and refrigerate it. Cut off slices for sandwiches. For dinner in a fry pan, sauté portobello slices in olive oil, with chopped onions, garlic, kale and either sliced or chopped turkey. You can also put in a couple of tablespoons of the turkey drippings, salt and pepper. Mix it up and serve. Turkey sausages are good this way too. You can vary the vegetables. Swiss chard, broccoli, yellow or green squash, string beans, or whatever is in the fridge. Watermelon cut in pieces makes a good desert. I usually have roasted turkey breast in the fridge. Can you roast in the oven as you drive?

boneless chicken breast, organic, whole wheat pasta, pesto, frozen organic peas, skillet the chicken slice up in bitesize chunks, throw the peas in the pasta near the end of the boil, mix it all together. I usually get at least two days out of this.

Scrambled eggs with whatever in in the fridge. I was thinking how much easier that bed would be if you opened the back door and he did one side, while you did the other. It's always fun to watch you two sort things out. You always seem to mange.

Tortilla's, Block Colby cheese, get a pint Restaurant salsa (usually cheap) Shred cheese,Heat your chicken after pulling apart- lightly blacken your tortillas, add veggies. (I keep Blackened bell Peppers, onions in baggies Refrig) after all meat, veggies heated, add cheese to tortillas, Flip- eat with salsa. Easy- Fast. OR with Rotisserie Chicken, add Michelinas Alfredo noodles (frozen-but put in pan with veggies/ chicken you like-Stir) Done.

Healthy fried rice. You can pre-cook the rice and keep it in your fridge or freezer. When you are ready you can chop up whatever veggies you have and soy sauce. Its quick and easy, and a great warm meal when you are not in the mood for cold sandwiches.

Add some sautéed tofu or "Short-cut" type chicken for protein! (I'm a bit of a protein Nazi). Although real fried rice has scrambled egg in it for protein but I'm not a scrambled egg fan.
At Walmart I get those frozen bags of veggies that you just “steam in the bag” (microwave). I also love ❤️ the potatoes wrapped in shrink wrap cooked in the microwave (lots of TH-cam videos on this). Easy peazy.

Go to dinners: 1. Pasta with mushroom, onion and any other leftover veg lying around, sauteed and reduced in chicken/veg stock with a large tbsp of ragu and tomato sauce. After the sauce has reduced to about 1/3 add a couple of large spoonfuls (1/3 to 1/2 cup) of the pasta water and reduce again to desired density. Add pasta to sauce and mix well - add a handful of breadcrumbs to thicken further if needed or pasta water to thin. 2. Quesadillas: cheese, mushrooms, avocado. And if that's too labour intensive, 3. Cereal.
Soups: Cauliflower + anything (asparagus, broccoli, green beans, beets, etc). Boil/steam veg until tender, drain & blitz in blender. Season to taste then sprinkle with smoked paprika, ex virg olive oil and maybe a small dollop of sour cream (creme fraiche if you have it), horseradish or blue cheese flakes.

Open face roast beef sandwiches. Good quality roast beef from the deli. Package of instant au jus package of brown gravy mix. Make the au jus, put the roast beef in to warm it up. Place beef on some good bread and top with brown gravy. Yuuummy

Quick dinner, lunch or breakfast: Chilaquiles! (Not authentic) All done in one pan. Tear up a tortilla and fry in a little oil till crisp, set aside. In the same pan, scramble some eggs with cheese, veggies, anything you like. Add the tortilla strips back in with a bunch of salsa, to coat everything like a sauce. So good!

There was so little going on in this video, but I loved it. I think its because you guys are just cool. Thanks for sharing! Also, go-to-dinner for me is veggie buritos (or you can add any type of ground/sliced meat you like). But, with each layer add different seasonings to add different depths of flavor, so the rice, the pepers/onions/mushrooms, fresh spinach & tomatoes, salsa and wrapped in a garlic or tomato basil wrap. So filling, and delicious.

Two years late to the party but popcorn is my go to meal.
My favorite scene of Nemo is Dory talking to the whales. You crack me up talking to Frank. As for go to food I take some pita bread and fry it on both sides with olive oil. Once fried put your sauc and cheese preferences and bake till the cheese is melted. It's delicious and super easy.
Tortilla with avocado, add salt/pepper and toasted sesame seed oil. Viola!
Get Purdue shortcuts-type cut up chicken or left over rotisserie chicken scraps and mix it with salsa (to taste), warm it up in the microwave for about 30 seconds. Take two flour tortillas and sprinkle shredded Mexican cheese blend (or Cheddar or Jack or any combination thereof) on each tortilla and microwave for 20 seconds till it melts. Then, put the chicken filling on one side and place the other side on top to make a "sandwich." (You can add cooked rice if you have any left over into the filling to make it a bit more filling for carb loading for biking days). Grill on griddle until it's crispy (don't forget to flip it). Criminally easy chicken quesadilla that my son loves!!! Can serve it with heated refried beans from a can or some salad. Of course, sour cream and guacamole on top are great too but if you are on a budget, that could be a bit of a luxury:) Please let me know if you want my cheater's guacamole recipe:)
Veggie wrap! Spinach tomato goat cheese jalapeño avocado cucumber Turkish pepper olive and olive oil. Or whatever else you can role up in a wrap. Kinda like a sandwich!

Since you have an oven, you can do it nice and easy in tops 30 minutes.
Slice up an eggplant which should be enough for both of you. Put a slice of red onion then a layer of either some ham or mushroom on it. I mostly eat veggie so I usually put some fake meat instead. Then you wanna put some cheese on top followed with slices of cocktail tomato or olive. Make it even nicer by adding some pumpkin or sunflower next to them. Of course salt goes on every layer and spice it as well according to your taste. 15 minutes in the oven on C200 followed by 5 min in grill mode will give you an awesome and healthy meal. You can boost it up with some sour (oat) cream but it you may eat it American style with ketchup or mayo instead. I hope you'll enjoy! :)

Best simple dinner....chili and cinnamon rolls. Believe it or not was a favorite high school lunch for many of us from Fort Dodge, Iowa from the 70's. Since the early 2000's have been camping with a group of buddies each spring and fall at a campground in northern Ohio and they have become converts to this sweet and salty dinner which we enjoy the first night of the campout. Not the healthiest, but a terrific guilty pleasure.

Lemon Pepper Shrimp w/Fabulous Toast. Lemon Pepper seasoning on shrimp and saute in butter until cooked. Toast is Baguette sliced just like in ur video then slather a mixture of Mayo (I prefer Miracle Whip), Sun Dried Tomato and Fresh Shredded Parm onto bread slices, put into oven at 350 and under 15 mins all is done. Dipping the Toast in the lemon butter sauce from the Shrimp is awesomeness. Luv Luv Luv all ur videos.

Love the video! Not sure if you guys use a slow cooker, but I just love the convenience of throwing a bunch of ingredients in and letting it cook. Also having quick re-heated meals for days is a plus lol! One of my favorites is a kind of spicy chicken dish. Just throw in: chicken thighs (or breasts)about a pound or two depending on how much chicken you want in it, a can of black beans, bell peppers (Trader Joe's has already chopped up frozen peppers which makes life so much easier), chopped sweet potatoes (again Trader Joe's sells these in a bag), about a cup of chicken broth, a jar of salsa, a few cloves of garlic and let it slow cook on low for 4-5 hours! You can get some microwave rice to go with if you want, but otherwise just garnish with a little lime and cilantro!

My go to meal? Here’s 2. I always have fresh veggies of some sort and often have some cooked quinoa. Tonight, no quinoa so I cleaned up some farmers market romaine, preparing for a salad. Then I pulled out some freshly roasted Brussels Sprouts, popped them in a small pan to heat and added cut -celery, mushrooms, cauliflower, squash and whatever else that needed to be eaten. Then I mixed them together with spices of choice and put them on top of the bowl of lettuce. I added avocado, dressing, and there you have it. Bread and lunch meats are out of the question for me, and I feel a 100% better since making those choices. Thanks for asking. I enjoy all the videos you two do, yet this one brought me ‘into your home’. Nothing like seeing the day to day grind, or seeing you’re ‘friends’ routine activities. That’s a relationship builder, right?

Bellingham is rad! Yeah, y'all must've gone through Seattle traffic, Everett traffic and all those towns up I-5. I have a Nu-Wave oven and I keep a 5 or 10 pound bag of potatoes and a french fry splitter and I air fry french fries in it. Really good with cheese, bleu or ranch dressing or left over taco chili. I also like Ramen with veggies and spices and pre-fried tofu. Boil the water and toss it all in!

evening food - a 3 egg omelette, cover with a Spanish style tomato Frito (natural pureed tomato with spices) sprinkle with hand torn spinach, and add extras to taste, ie tuna chunks, chicken, turkey or any meat chunks or even corned beef, add a little tomato ketchup and add salt and pepper to taste and a good fresh bread to accompany. Delicious!
oh, and I forgot to say you can add a topping of grated cheese over the whole thing - - - yummy!

Hi, guys loving your videos. You could give what we call down under, “Boats” a go.
So to make Boats, you need to cut a bread roll in half and toast it lightly either side. Then you add salsa to the inside off the top and bottom. On top of that, you put hot salami and then grated cheese on top. That goes back under the grill to melt the cheese. You can change up the ingredients to suit your taste. If you try them, I hope you enjoy them. Keep up the great work.

I love Bellingham , I love the water you went pass my house I live in Arlington. my go to is 1 pot meals, where its a soup,stew, grilling cut up chicken pieces, veggies w/ rice in a bowl. or brown chicken breasts,and brocc or brussel spouts,then toss in alfredo sauce and noodles and let the noodles cook in the sauce. and everything marries. then you only have 1 pan/skettle to clean up.
