Y'shtola is actually referencing an event from shortly before the Calamity in 1.x, where multiple Atomos appeared and drained the old aetherytes of their aether, spitting out waves of skeletons, imps and other voidsent, making once-safe encampment areas into treacherous battlegrounds.

I love this cutscenes. The explanation clarifies what we have previously observed, and not just about the Voidsent.
Why are there animated statues in Ampador that resemble Sin Eaters? Because the Ampadori were making artificial Sin Eaters, animating statues with Light infused Sin Eaters souls that they had made in the same way Vtra's people had made an artificial Voidsent.
Oh shit...that makes so much sense, I hate myself for not seeing it.
I wonder if the gargoyle that the Ascian summoned against us, in our first MSQ boss battle, was also just a soul in a statue, or if the Ascian, with their vast amount of aether, pulled one through with body and soul... what difference does that make? Is a body-and-soul stronger than one inhabiting a statue? Or is the hard material of the statue maybe even giving the voidsent an advantage over it's original fleshy body in combat?
The Scions certainly didn't seem any weaker as just bare souls, then they were in their bodies, but how much of that is just game mechanics and how much lore mechanics?
Thancred was actually stronger, given how hard he could push his stealth against Ranjit. I think the info blurb about his final stealth thing states he literally destabilizes his soul/form, which is what damn near kills him.
