I make something very similar. I use a packet of taco seasoning with the meat mixture. Layer with low carb flour tortillas & cheese in an 8 x 8 pan. Top with more cheese & bake covered until bubbly. Sour cream is delicious on top. 😋

Refrigerating your onions will keep the eye-watering fumes from being a problem. You can easily cut, mince, chop onions completely tear free. I've been refrigerating my onions for years. Last time I cried when chopping an onion was about a month ago when I was chopping a freshly purchased onion without refrigerating. Helps keep onion from going bad as quickly.
I made the taco spaghetti today. I love 1 pot meals. It is simply fantastic! Will definitely make it more often. Spooned a little sour cream on top. Out of this world!

Natasha, I was wondering, could you do some low or no sodium meal videos? I have high BP and struggling with making meals that actually taste good with little to no salt. I'm sure I'm not the only one that enjoys your videos and would like to see some videos for viewers like me. Thank you in advanced! Frank
Maybe swap out the salt for various herbs and spices instead, incorporate more fresh veggies and protein to each dish, use low sodium or make your own bone broth/stock for soups, and squeeze in fresh lemon juice for added freshness whenever possible. There are also healthy homemade dipping sauces you could make on the side that don't require salt (i.e. hummus, tzatziki, and honey dijon vinaigrette). While they may taste better with some salt, this may help to naturally enhance the flavor of your dishes without added salt.
