It’s been 8 years I lived in Poland , Germany and Now Czech Republic. I love EU/Russian being light . I sometimes mix Indian spice as cocktail but not red chillies. Spices actually promotes body immunity. Pause. You can remove red chillies! Indian food is spicy in order to force Indians to drink lots of water to keep themselves well hydrated. Also spices preserve food longer in the warm climate we have in most of our country.
Don't ever talk about ancient India again because you have not even 0.01% idea about Indian history. 1. There was no street food in ancient times, people used to cook their own food. 2. India was rich in ancient times and there was not so much population. 3. Species were used by royalty and royal kitchens more than common food. Due to caste system, multiple invasions, India was occupied by foreign powers for last thousand years which changed its culture, made them uneducated and poor. Street food is a means to make living by mostly lower castes which were included in the civilization after independence but not properly educated.
