I use it to make potato pancakes, we all know how potatoes turn brown! I want to try it here. Also the banana plant is full of this latex kind of thing that is astringent to taste and stains, I wonder if it can be soaked away?
After removing about 5, 6 brown skins we chop the remaining flower all together and make stir fry adding grated coconut and some whole moog dal with some onions ,green chillies etc.

Is it not good for health or is it poisonous? I want to understand why we should eat this tall sprout? I feel it is easier to make curry without having to remove this tall sprout, because I'm lazy. :)
You can use lemon or lime juice. Rub the fruit on the cutting board and rub your knife. The acidity is what you are looking for to keep them from turning colors on you.

Yes, it is hard to cook and bitter & strong in taste. Doesn't get along in curry well.
