My theory: Monster souls are different than human souls, their worse, like alphys said it takes ages for humans to turn into dust, but the same thing wouldn't happen as they would most likely still be dead once they do, but monsters turn to dust immediately, because their soul is weaker. So I think that when too much determination enters their body, before they die they melt instead of turning to dust, but eventually turn into dust. BUT because they were mixed together they can't die as easily, so they don't die a few seconds after, like undyne, but the problem could also be that undyne didn't get enough.
Dialogue in the game pretty much mirrors what Alphys says here. It's not so much the strength of the soul, it's the lack of physical substance. Human bodies are mostly made of water, while monster bodies are mostly made of magic. There's also the fact that monsters don't have Determination, these were artificially injected. What happened, then, is the Determination prevents them from dying, however their being near death has "bled" their magic, and apparently there's no way to replenish it. The result is they're living almost solely on physical matter, which they don't have enough of to stay solid.

Honestly this part of the game made me cry and horrified. I thought alphys at the time was trying to cure the monsters cause they were sick. But the stuff she was using to cure them didn't work well and started melting them and making the monsters fuse together. And when the human goes down to her lab, the colorful place that it used to be was dark and you never knew what could come out in any corner or room. That's what made me terrified of how dark the game really got.

I wonder if I'm the only one who thinks this, but for Lemon Bread, I had never thought the lines were spoken one after another, I had always saw it as the voices all speaking at the same time. I wonder if I'm the only one who thinks this, but for Lemon Bread, I had never thought the lines were spoken one after another, I had always saw it as the voices all speaking at the same time. Sort of the same for Reaper Bird, except everyone that formed it was saying something different and a single spoken line never reached out.
*There's a lot of people who don't understand how awful this made alphys feel, she is more then likely pained with nightmares of this true lab*
