That meat looks very tough. I always wonder why Nigerians and Ghanaians do their meat like this, dry like jerky. Edit: apologies for my ignorance. I now understand it is for the preservation of the meat, in high/humid temperatures with little to no refrigeration.

As for the ginger you can blend with skin if is soft, also if your blend is good , if not the ginger skin will be flying everywhere in your stew.😄
