    I’ve made this multiple times and am obsessed. I’m growing thai basil this summer and I have yet to use it for any other dish but this. So flavourful, so delish, and comes together so easily. Thank you for the gorgeous recipe!

    I’ve tried making pad kee mao a few times using different recipes but this is my fave recipe so far! I added red bell pepper and Chinese broccoli to add more veg
    I also used flank steak instead of chicken and to make sure the meat had some flavor to it, I marinated it separately with fish sauce and garlic for about 10 minutes while prepping the other parts of the recipe. I also cooked the noodles and beef separately, using half the sauce for each cook to make sure both the beef and noodles picked up the flavor of the sauce.
    Next time though, I think I’ll fry the noodles in the pan for a few minutes to pick up some char before adding in the sauce.

      That is exactly correct! The noodles should be seared in the sauce to develop flavor and color

    I was obsessed with Pad Thai noodles until I discovered Pad Kee Mao a couple of weeks ago. Literally the best noodles of my life. It's like they are an extension of the meat. One of the best things I've ever tasted.

    Thank you for this awesome recipe. I made it today and my home became so fragrant! It was better then my local thai takeout. I added more thai chili then the average Joe. Also added cubed tomato, bell pepper, sliced carrots, and broccoli. Used less soy to cut salt. SIMPLY AMAZING!

    This looks fantastic - and similar to a dish I love. It's called Crazy Noodles at our local Thai restaurant. The best way I can describe it is - Pad Thai but much spicier, and without the "sweetness" I find in most Pad Thai. No peanuts either, but loaded with basil and spices. Fantastic -thank you for sharing - I've been looking for something like this.

    I first tried Thai food, specifically drunken noodles with my girlfriend (who is of half Asian descent) in 2016. I love this dish.

    Hands down easy and full of flavor! You can buy one of those rotisserie chickens at the supermarket to make a 15 minute dinner!!

    I had to improvise using sriracha chili paste and regular basil because my local grocery store struggles, but it was so good! I will definitely make it again!

    I'm gonna make this soon. A few years ago I did a test recipe of Drunk Man Noodles, except I couldn't find fresh flat noodles so I had to use Pad Thai noodles instead,
    in a huge wok I've had for years--came out fantastic! Fresh noodles, like fresh pasta, are that much better, though. I just wanted to see if I could do Asian cuisine, and I did. I'm no
    Gordon Ramsay, but I did ok. It's spectacularly easy, prepping takes a lot more time than the cooking. You almost cannot screw it up, even if you turn the heat off towards the end and just stir it up, you have to really work at it to burn it. The wok is better, since it heats up well, fast, and is tailor made for stir frying/sauteeing everything rapidly. I had more experience making Cajun food at home. This is really my fave Thai dish, so I I'm going to do this up soon as I can go get all the ingredients. Curries, I think, take more practice, a bit more delicate than this type of noodle dish.
    There a few Indian and Asian markets in L.I. NY that have some of the more esoteric ingredients, but more in Queens or Manhattan, I believe. I don't recall using Thai basil as I couldn't
    find it at the time.

    You dont show what kind of noodle to use and how to prepare them before adding in the wok

      chotunab normally they use a wide rice noodle, sometimes sold in sheets, to be cut about 1” wide. I found the fresh sheets at the Asian store. You can sub Pad Thai rice noodles which are thinner, but easier to find.

    Kee mao: is like crazy drunk, like "me and the boys went to Soi 6 and got Kee Mao". Mao is drunk, Kee mao is an argument with your wife :p
