Made with hearty gungo peas (pigeon peas), creamy coconut milk, and a savory combination of salt beef and fresh beef, this soup delivers authentic Caribbean flavors in every bite. Ground provisions like yam, sweet potato, and green banana, paired with tender dumplings, create a satisfying and comforting meal. Enhanced with aromatic herbs, spices, and just the right amount of Scotch bonnet pepper, this dish is a testament to wholesome, soulful cooking.
Mama’s Gungo Pea Soup Recipe
Ingredients:
• 2 cups dried gungo peas (soaked overnight or canned for convenience)
• 1 cup coconut milk
• 8 cups water or beef stock
• 1 pound salt beef (soaked to remove excess salt)
• 1 pound fresh beef (stew beef or shank, cut into chunks)
• 1 medium yam, peeled and diced
• 1 medium sweet potato, peeled and diced
• 2 carrots, peeled and sliced
• 1 green banana, peeled and sliced (optional)
• 1 cup flour (for dumplings)
• 1 tsp salt (plus more to taste)
• 1 Scotch bonnet pepper (whole)
• 4 sprigs fresh thyme
• 2 scallions, chopped
• 3 garlic cloves, minced
• 1 small onion, diced
• ½ tsp black pepper
• ½ tsp all-purpose seasoning
Directions:
1. Cook the Gungo Peas: If using dried peas, rinse and cook them in water with a pinch of salt until tender (about 1.5-2 hours). If using canned peas, rinse and set aside.
2. Prepare the Beef: In a large pot, bring water or beef stock to a boil. Add the salt beef and fresh beef, cooking until tender (about 1-1.5 hours), skimming any foam from the surface.
3. Build the Soup Base: Add coconut milk, thyme, scallions, garlic, onion, and Scotch bonnet pepper to the pot. Simmer for about 10 minutes to allow the flavors to meld.
4. Add Vegetables: Stir in the yam, sweet potato, carrots, and green banana. Cook until the vegetables are tender.
5. Make the Dumplings: Combine flour, a pinch of salt, and enough water in a bowl to form a soft dough. Roll the dough into small, oblong dumplings and drop them into the soup.
6. Add Gungo Peas: Stir in the cooked or canned gungo peas and simmer for 10-15 minutes. Adjust the seasoning with salt, black pepper, and all-purpose seasoning to taste.
7. Serve: Remove the Scotch bonnet pepper (unless you prefer a spicy kick) and serve the soup hot.
This delicious, wholesome soup is perfect on its own or enjoyed with a side of fried dumplings or hard dough bread. A true taste of Jamaican soul food!
